【発明の属する技術分野】
本発明は、食品包み込み成形装置、より詳しくは、パン生地、饅頭生地等の外皮材によって、餡、調理した肉・野菜等の内材を確実に包み込み成形することができる食品包み込み成形装置に関するものである。

【従来の技術】
従来、パン生地、饅頭生地等の外皮材により餡、調理した肉・野菜等の内材を包み込む食品成形に関する技術としては、内材を棒状にしてその外側に外皮材を筒状にしたものを連続的に形成し、これをシャッタ機構の開閉動作により絞り込んで成形切断することが行われている(例えば実公昭63-29433号公報)。しかしながら、外皮材としてパン生地等の発酵性の生地を用いる場合には、筒状形成する際に生地に過度な圧力や捻りなどが加わることから、成形切断後に生地が十分膨らまなくなり、外皮材が弾力性に乏しい硬い食品になってしまう難点があり、その成形加工は人手で行っているのが現状である。

こうした外皮材の筒状形成を避けてシート状の外皮材から食品成形を行う方法も提案されている。例えば、特開2000-50854号公報では、上面が開口したカップ状の雌型の内壁面に沿って外包材を椀状に形成し、この椀状に形成した外包材の内部に内材を供給した後、外包材の上縁部を複数のシャッタ片から成るシャッタで絞ることにより外包材の上縁部を封着して内材を包み込み成形することが記載されている。

【発明が解決しようとする課題】
しかしながら、この従来の食品成形方法にあっては、カップ状の雌型を用いて包み込み成形を行っているので、このカップ状の雌型に応じたサイズの成形食品は得ることができるものの、この雌型の容積よりも大きな成形食品は得ることができず、しかも、この雌型の上面にシート状の外皮材を供給したとき、外皮材が雌型の内部に落ち込んでしまうと以後の工程で外皮材をうまく封着できなくなることから、供給すべきシート状外皮材の大きさ、厚み等の形状や柔軟性、粘着性等の特性に関する調整、変更も狭い範囲に限定されていたのが実情であり、成形食品のサイズ変更や成形食品の外皮材と内材の割合の変更の要請に十分に対応できない難点があった。

本発明は、従来の食品成形技術に上記のような難点があったことに鑑みて為されたもので、外皮材の大きさ、厚み等の形状や柔軟性、粘着性等の特性が変化しても、この外皮材を成形部に安定的に供給することができ、確実に外皮材で内材を包み込み成形することができ、成形食品のサイズ変更や外皮材と内材との割合の変更にも十分に対応することができる食品包み成形装置を提供することを目的とする。

【課題を解決するための手段】
本発明に係る食品の包み込み成形装置は、複数のシャッタ片から成るシャッタと、前記シャッタの下方に配設され、かつ、開口部を備え、この開口部を塞ぐように外皮材が戴置されるべき受け部材と、外皮材に内材を配置した状態で、前記シャッタを閉じ動作させることによって内材を包むように外皮材の周縁部を封着するシャッタ駆動手段とを備えた食品成形装置であって、
前記受け部材の開口部に、前記受け部材上に戴置された外皮材を支える弾性変形可能なガイドを設けたことを特徴とする。さらに、外皮材を受け部材の開口部に押し込んで外皮材を椀状に形成する押し込み手段を備えたことを特徴とする。さらに、押し込み手段は、内材を供給する内材供給手段を備えていることを特徴とする。さらに、受け部材の下方に、外皮材を支持する支持手段を備えたことを特徴とする。さらに、外皮材の縁部を受け部材上に保持する保持手段を備えたことを特徴とする。

以下、本発明を添付図面に示す、第一実施形態および第二実施形態に基づいて詳しく説明する。

[第一実施形態]
図1〜図11を参照しながら第一実施形態の食品包み込み成形装置について説明する。なお、図1は本実施形態の食品包み込み成形装置の部分断面正面図、図2及び図3は同装置のシャッタ、受け部材、ガイドを説明する概略平面図、図4は同装置のシャッタ駆動手段の概略平面図、図5〜図11は同装置による食品包み込み成形工程を説明する概略側面図である。

図1中、符号3で指示するものは、上記受け部材2の開口部20の内周縁に設けられた弾性変形可能なガイドである。本実施形態のガイド3は、図2及び図5に示すように、ゴム材、ウレタン樹脂等の弾性変形可能な薄板材により形成されており、その中央には、前記受け部材2の開口部20より小径の円孔30が開設されている。このガイド3が、円孔30と受け部材2の開口部20とが同心状態になるように固定部材31によって受け部材2の開口部20の内周縁に弾性変形可能に固定されている。

図1中、符号4で指示するものは、前記シャッタ1の上方に配設され、シート状の外皮材を椀状に形成するための押し込み手段である。本実施形態の押し込み手段4は、ステー41に固定された押し込み部材40と、このステー41を上下動させる送りねじ機構42と、この送りねじ機構42を駆動するモータ43とから構成されており、このモータ43の回転方向、回転角度等を制御することにより押し込み部材40を適宜に上下昇降させる。この押し込み部材40を下降させて前記受け部材2の開口部20に進入させることにより受け部材2の上面に戴置した外皮材の中央部を窪ませて外皮材を椀状に形成する。

また、本実施形態の押し込み手段4は、椀状に形成した外皮材の内側に内材を供給する内材供給手段を備えている。即ち、本実施形態の押し込み部材40は、下端に内材を吐出するための吐出孔を備えた筒体にて構成されており、この吐出孔を開閉するための弁50が内装されている。しかして、ホッパ55内へ投入した内材を、従来公知のポンプ54により供給パイプ53を通じて押し込み部材40の筒内へ圧送し、そして、前記ステー41に固定されたエアシリンダ52の進退動作によりロッド51を介して弁50を上下動させることで吐出孔を適宜に開閉し、椀状形成した外皮材の内側に所要量の内材を供給し配置する。

図1中、符号6で指示するものは、前記シャッタ1の上方に配設され、外皮材の縁部を受け部材2上に保持する保持手段である。この保持手段6は、図5に示すように、押し込み手段4の押し込み部材40に固定され、複数の通孔を有するリング状のステー62と、このステー62の通孔に上下スライド可能に挿嵌され、上端にステー62に係止可能な頭部を備えた複数の支持ロッド61・61…と、この支持ロッド61・61…の下端に固定されたリング状の押え部材60と、この押え部材60とステー62との間において各支持ロッド61に被嵌され、押え部材60を下方へ付勢するコイルばね63とから構成されている。この押し込み部材40を下降させることによって押え部材60で受け部材2上の外皮材の縁部を押えて保持する。

図1中、符号7で指示するものは、前記受け部材2の下方に配設され、外皮材を支持するための支持手段である。この支持手段7は、ラック−ピニオン機構72により支持ロッド71を介して適宜に上下動する支持部材70と、この支持部材70によってベルトが上下動されるベルトコンベヤ73とから構成されている。この支持手段7を適宜に上下動させて外皮材をベルト上に支持すると共に、成形して得られた成形品Hをベルト上に載置して搬送する。

以下、図5〜図11を参照しながら第一実施形態の食品包み込み成形装置による食品包み込み成形工程について説明する。なお、本実施形態では外皮材Fとしてパン生地を使用し、内材Gとして餡を使用した例で説明する。

まず、図5に示すように、シャッタ1を開口させた状態で、受け部材2の上面にシート状の外皮材Fを供給する。外皮材Fの形状は、ローラーで伸ばされ、楕円形状をしている。このとき、受け部材2の開口部20の内周縁には、ガイド3が配設されているので、供給したシート状の外皮材Fが開口部20に落ち込む恐れもなく、安定的に外皮材Fを受け部材2上に供給戴置することができる。そして、受け部材2上に外皮材Fを戴置した後、シャッタ1のシャッタ片10を閉じる方向に動作させてその開口面積を縮小させれば、縮小した開口状態に合わせて外皮材Fをセットすることができ、外皮材Fが所定位置に収まるように外皮材Fの位置調整を行なうことができる。このことによって、外皮材の形状のばらつきや位置ずれが予め修正され、より確実な成形処理を行なうことが可能となる。

次に、図6に示すように、上方の押し込み手段4の押し込み部材40を下降させることによって保持手段6の押え部材60で外皮材Fの縁部を受け部材2上に保持する。即ち、押し込み部材40と共に保持手段6を下降させて押え部材60を外皮材Fの縁部に当接させ、この保持手段6をさらに下降させることによって押え部材60とステー62との間隔を狭めてコイルばね63を圧縮し、このコイルばね63の弾性力を利用して押え部材60を外皮材Fの縁部に押し付けて外皮材Fを受け部材2上で押え保持する。

そして、図7に示すように、押え部材60で外皮材Fの縁部を保持した状態で、押し込み部材40をさらに下降させることにより押し込み部材40を受け部材2の開口部20に進入させ、シート状の外皮材Fの中央部分を受け部材2の開口部20に押し込むことにより外皮材Fを椀状に形成する。このように本実施形態では、外皮材Fを椀状形成する際に、外皮材Fの縁部を保持手段6で保持するので、外皮材Fがパン生地等の弾性に富む食材であっても、外皮材Fの縁部周辺を伸ばしながら椀状に形成することができ、たとえ多少外皮材の形状・大きさがばらついていたり、位置ずれがあったとしても、外皮材を確実に椀状形成することができる。また、外皮材を椀状形成するとき、弾性変形可能なガイド3は、押し込み部材40の下降によって下方へ曲げられ、その弾性反発力によって椀状形成された外皮材Fの側面を支えることができ、そしてまた、このとき、外皮材Fを支持部材70で支持するようにすれば、外皮材が必要以上に下方へ伸びてしまうことを防ぐことができる。

次に、図8に示すように押し込み部材40を上昇させながら押し込み部材40内の弁50を上昇させて吐出孔を開くことにより内材Gを吐出させ、椀状形成された外皮材Fの内側に内材Gを配置する。そして、所定量の内材Gが吐出された時点で弁50を下降させて吐出孔を閉じる。このように本実施形態では、押し込み部材40を上昇させると同時にこの押し込み部材40を通して内材Gを供給しており、しかも、外皮材Fの側面を曲げ変形されたガイド3の弾性反発力で支えることができるので、押し込み部材40の上昇に伴ってパン生地から成る外皮材Fが収縮するのを防ぐことができると共に、外皮材Fの形状形成と内材Gの供給を短時間に効率良く行なうことが可能となる。また、このとき、外皮材Fを支持部材70で支持しており、しかも、外皮材Fの側面をガイド3で支えているので、内材Gの吐出による外皮材Fの必要以上の伸びを防ぐこともでき、内材Gを確実に外皮材Fの内側に配置することができる。

次に、図9に示すように、押し込み部材40をさらに上昇させて押え部材60を外皮材Fの縁部から離す。そして、図10及び図11に示すように、シャッタ1を閉じ動作させることによって、受け部材2上の外皮材Fの周縁部を内材Gを包むように集め、集めた外皮材Fの周縁部を封着することにより外皮材Fで内材Gを包み込んだ成形品Hを得る。その後、シャッタ1を開いて成形品Hを支える支持部材70を下降させてベルトに成形品Hを戴置し、ベルトコンベヤ73を駆動させて成形品Hをベルト搬送する。

このように本実施形態によれば、受け部材2の上面にシート状の外皮材Fを供給したとき、受け部材2の開口部20の内周縁に配設されたガイド3が外皮材Fを安定的に支えるので、例えば、成形品Hのサイズ変更や外皮材Fと内材Gの割合変更のために、供給すべきシート状外皮材の大きさや厚み等を変更しても、このシート状外皮材が受け部材2の開口部20に落ち込んでしまう恐れもなく、以後の工程で確実に包み込み成形を行うことができる。

また、本実施形態によれば、受け部材2の開口部20に配設されたガイド3が弾性変形するので、図8に示すように、椀状形成した外皮材Fの内側に内材Gを供給するときに、膨らんだ外皮材Fの外径が受け部材2の開口部20の径より大きくなることも許容でき、成形品Hのサイズが受け部材2の開口部20の径に限定されることもなく成形品Hのサイズを適宜に変更することができる。

なお、本実施形態では、外皮材を椀状形成した後、外皮材Fの内側に内材Gを配置しているが、例えば、予め内材Gを外皮材F上に載置しておいた状態で、この外皮材Fを受け部材2上に供給し、押し込み部材40により内材Gと共に外皮材Fをシャッタ1の開口部に押し込むことによって外皮材Fを椀状形成するようにしても良い。このように、予め内材Gを外皮材F上に載置した状態で受け部材2上に供給しても、開口部20の内周縁にガイド3が配設されているので、外皮材を安定的に戴置することができる。

また、本実施形態では、中央に円孔30を開設した薄板材から成るガイド3を使用しているが、本発明は勿論これに限定されるものではなく、例えば、ガイド3の円孔30に放射状に切れ目を形成したり、ガイド3の厚みを先端側に行く程、薄くしたりすることも可能であり、ガイド3の弾性反発力等を考慮して種々の設計変更が可能である。このように、適度な弾性反発力を有するガイド3を適宜に選択することによって、例えば、シャッタ1で外皮材の周縁部を集めて封着する際に、このガイド3の弾性反発力を利用して外皮材の周縁部を集めることも可能であり、このことで、より確実な食品の包み込み成形を行うことが可能となる。

更にまた、本実施形態では、保持手段6により外皮材Fの縁部を受け部材2上に保持して外皮材Fを椀状形成しているが、図12〜図15に示すように、この保持手段を省略することも可能であり、このことによって、装置構成の簡素化と成形工程の簡略化を図ることができる。また、本実施形態では、外皮材F及び成形品Hを支える支持手段7として、支持部材70を板状にしてベルトコンベヤ73のベルトを上下させるように構成しているが、ベルトコンベヤ自体を上下動させるようにしても良い。

[第二実施形態]
図16〜図23を参照しながら第二実施形態の食品包み込み成形装置について説明する。なお、図16は本実施形態の食品包み込み成形装置の部分断面正面図、図17〜図23は同装置による食品包み込み成形工程の概略側面図である。

本実施形態の食品包み込み成形装置は、上述した第一実施形態におけるガイド3および押し込み手段4の代わりに、受け部材2上に供給された外皮材Fを支えると共にこの外皮材Fを受け部材2の開口部20に引き込むことによって椀状形成する引き込み手段8を採用した点に特徴があり、他の構成は第一実施形態とほぼ同様であり、第一実施形態と同一の符号を付してその説明を省略する。

本実施形態の引き込み手段8は、図16に示すように昇降台83に固定されたステー82に基部側が軸受けされ、先端側が直角に屈曲した管状の引き込み部材81と、この引き込み部材81の先端を回動させるために引き込み部材81の基部を回動させるピニオン−ラック機構84と、このピニオン−ラック機構84のラックを直線往復運動させる図示しないエアシリンダと、上記昇降台83を上下昇降させるための送りねじ機構85と、この送りねじ機構85の雄ねじを駆動するモータ86とから構成されている。このモータ86の回転方向、回転角度等を制御することにより引き込み部材81の先端を適宜に上下昇降させると共に、エアシリンダによりピニオン−ラック機構84を駆動させて適時に引き込み部材81の先端を上向きから下向きへ反転させる。

また、この引き込み手段8の引き込み部材81は、図17に示すように、その先端に複数の通気孔80・80…が開設されている一方、基端側には図示しない吸排気装置が接続されており、これら通気孔80・80…で吸気することにより外皮材Fの下面を吸着保持し(図18参照)、そして、これら通気孔80・80…から噴気することにより吸着保持した外皮材Fを離すように構成されている(図23参照)。

以下、図17〜図23を参照しながら第二実施形態の食品包み込み成形装置による食品包み込み成形工程について説明する。

まず、図17に示すように、シャッタ1を開口させ、引き込み手段8の引き込み部材81を上昇させて予め受け部材2の開口部20に進入させておいた状態で、受け部材2及び引き込み部材81上にシート状外皮材Fを戴置する。外皮材Fの形状はローラーで伸ばされ、楕円形状をしており、この外皮材F上には図示しない内材供給手段により予め内材Gが配置されている。このように、本実施形態では、外皮材Fを、受け部材2及び引き込み部材81上に戴置することができるので、供給したシート状の外皮材Fが受け部材2の開口部20に落ち込む恐れもなく、安定的に外皮材Fを供給戴置することができる。そして、第一実施形態と同様、外皮材Fを供給戴置した後、シャッタ1のシャッタ片10を閉じる方向に動作させてその開口面積を縮小させれば、縮小した開口状態に合わせて外皮材Fをセットすることができ、外皮材Fが所定位置に収まるように外皮材Fの位置調整を行うことができる。このことによって外皮材の形状のばらつきや位置ずれが予め修正され、より確実な成形処理を行うことが可能となる。

次に、図18に示すように、引き込み手段8の引き込み部材81の通気孔80から吸気して外皮材Fの中央部下面を吸着する。そして、上方の保持手段6を下降させて押え部材60で外皮材Fの縁部を受け部材2上で保持する。即ち、保持手段6を下降させて押え部材60を外皮材Fの縁部に当接させ、この保持手段6を更に下降させることによって押え部材60とステー62との間隔を狭めてコイルばね63を圧縮し、このコイルばね63の弾性力を利用して押え部材60を外皮材Fの縁部に押し付けて外皮材Fを受け部材2で押え保持する。

次に、図19に示すように、押え部材60で外皮材Fの縁部を押え保持した状態で外皮材Fの中央下面を引き込み部材81で吸着保持したまま、引き込み手段8を下降させて引き込み部材81を受け部材2の開口部20から退出させ、外皮材Fを受け部材2の開口部20に引き込むことにより外皮材Fを椀状に形成する。このとき、外皮材F上に予め供給されている内材Gは外皮材の椀状形成に伴って外皮材Fの中央部分と共に下降して椀状形成された外皮材Fの内側に配置される。このように本実施形態においても、外皮材Fを椀状形成する際に、外皮材Fの縁部を保持手段6で保持するので、外皮材Fがパン生地等の弾性に富む食材であっても、外皮材Fの縁部周辺を伸ばしながら椀状に形成することができ、たとえ多少外皮材の形状・大きさがばらついていたり、位置ずれがあったとしても、外皮材を確実に椀状形成することができる。

次に、図20に示すように、保持手段6を上昇させて押え部材60を外皮材Fの縁部から離す。そして、図20及び図21に示すように、シャッタ1を閉じ動作させることにより受け部材2上の外皮材Fの周縁部を、内材Gを包むように集め、集めた外皮材Fの周縁部を封着し、図22に示すようにシャッタ1を完全に閉鎖させることにより外皮材Fで内材Gを包み込んだ成形品Hを得る。その後、図23に示すように、引き込み部材81で成形品Hを吸着保持したまま、引き込み部材81の先端を上向きから下向きに反転させ、通気孔80から噴気することにより成形品Hを引き込み部材81から離してコンベヤ7上に戴置し、成形品Hをベルト搬送する。
