Abstract
The invention concerns the preservation and freezing of instant pearl milk tea and instant stuffed pearl. Cooked pearl absorbs water and releases colloid, so that it becomes less chewy. After being frozen, the pearl gets frosted, and loses the tender taste and color of the pearl. Solutions: (1) remove half-boiled pearl from the pot and add in number two sugar from Tai-sugar so that the sugar dissolves and sticks to the pearl surface. Purpose: After the half-boiled pearl is microwaved, it will become full-boiled transparent so that it retains tender taste of fresh cooked pearl. The number two sugar from Tai-sugar can slow down water permeation and increase pearl aroma and chewiness. (2) Pour cold water over the surface of pearl for instant packaging and low temperature freezing. Purpose: cold water can contract the surface layer of the pearl, so that the frost and instant freeze of the pearl can be prevented. (3) Before using the finished product, do not defrost (to prevent from more water absorption), and instead, microwave for five minutes and pour in high temperature disinfected milk tea instantly into the cup with sugar and ice cube, so as to prevent microwaved pearl stick together from over-boiling, in addition to retain the chewiness of fresh cooked pearl.
