Abstract
Mevcut buluş un, pompalanabilir bir yağ bileşimi, su ve isteğe bağlı olarak diğer unlu mamul malzemelerinin birlikte harmanlanmasını içeren bir nişastalı hamurun hazırlanmasına yönelik bir yöntem ile ilgilidir, burada pompalanabilir yağ bileşimi, düşük bir doymuş yağ asidi (SAFA) içeriğine sahiptir ve en az ağırlıkça en az %70 yağ içerir, söz konusu yağ 20 ºC'de %12-25 ve 30 ºC'de %5-20'lik bir katı yağ içeriğine sahiptir ve ayrıca bu yağ asidi bileşimi ile karakterize edilir: -ağırlıkça %26-40 SAFA; -? ağırlıkça %12 C8 -C14 yağ asitleri; - ağırlıkça %15-35 palmitik asit; - ağırlıkça ? %5 stearik asit; - ağırlıkça ? %55 doymamış C18 yağ asitleri; ve ? ağırlıkça ? %1.5 trans doymamış yağ asitleri; söz konusu yağ, PPM, PMP, PMM, MPM, PPU, PUP, PUU, UPU ve/veya ağırlıkça %2.5-5.0 OPO?dan oluşan gruptan seçilen ağırlıkça %4-20 trigliseridleri içerir, burada P palmitik asidi temsil eder, M C8 -C14 yağ asitlerini temsil eder, U poli doymamış C18 yağ asitlerini temsil eder, O oleik asidi temsil eder ve söz konusu yağ, ağırlıkça %15-80 bir interesterleştirilmiş yağ harmanını içerir, söz konusu yağ harmanı aşağıdakileri içerir: -ağırlıkça %20-80'lik bir lorik yağ ve ağırlıkça %80-20'lik palm yağı veya bunun bir fraksiyonu; veya ağırlıkça %50-80'lik bir palm stearini ve ağırlıkça %17'den az bir SAFA içeriğine sahip ağırlıkça %20-50'lik düşük SAFA'lı bir bitkisel yağ.
