Известен способ выделени белка и липвдов из гидробионтов и продуктов их переработки, включающий в себ обработку сырь неорганической солью и органическим растворителем при перемешивании . Однако белок, полученньй этим способом, обладает недостаточно хорошими качествами ввиду того, что в процессе обработки он непосредственно контактирует с органическим растворителем, что приводит к снижению его функциональных свойств. Целью изобретени вл етс повышение качества белка. Поставленна цель достигаетс тем, чТо в известном способе.вьщелени белка и липидов из гидробионтов и про;а;уктов их переработки , включающем обработку сырь неорганической солью и органическим растворителем и перемешивание, органический растворитель предварительно смешивают с неорганической солью и водой, вз тьми в весовом соотношении 20-50:3-15:35-77 соответственно, обработку сырь ведут полученным раствором при соотношении сырь и раствора от 1:0,5 до 1:3,0 с последующим .выделением белка из отслоившейс водно-солевой фазы, а липидов - из органической фазы. Сущкость способа заключаетс в следующем. Приготавливают раствор дл обработки сырь . Дл этого смеши вают органический растворитель с неорганической солью и водой в весовом соотношении 20-50:3-15:35-77 соответ ственно. Сырье заливают приготовленным раствором в соотношении от 1:0,5 до 1:3,0 и перемешивают в течение 10-60 мин при комнатной температуре. Происходит расслоение системы на вод но-солевую и органическую фазы. Белок , содержащийс в сырье, переходит в водно-солевую фазу, а лйпиды - в органическую (верхнюю) фазу. Фазы раздел ют декантацией, центрифугированием или фильтрованием. Перешедший в водно-солевую фазу белок высушиваю лиофильно или замораживают в виде блоков. Из органической фазы выдел ю лйпиды путем отгонки растворител . П р и м е р 1. К 40 кг измельченного до гомогенной массы антарктиче 8 82 ского крил прибавл ют предварительно приготовленный водный раствор, содержащий пропиповый спирт и хлористый н-атрий с таким расчетом, чтобы концентраци спирта, соли и воды составл ла соответственно 48, 4 и 38%: к массе смеси. Перемешивают полученную смесь 1 ч при комнатной температуре. Верхнюю фазу, содержащую основное количество липидов, отдел ют центрифугированием и удал ют декантацией. /Белковую массу, наход щуюс в нижней водно-солевой фазе, трижды промывают водой при соотношении масса:вода 1:3 дл удалени соли и растворител , а затем замораживают в ввде блоков или сушат ЛИОФИЛЬНО; Выход мороженого белкового продукта составл ет 85% от сырь . Из органической фазы отгон ют растворитель и получают 1,кг липидов крил . Пример2. По приемам и операци м способ идентичен способу, описанному в примере .1, за исключением того, что в качестве сырь берут 40 кг белковой пасты, подученной из антарктического крил . Обработку провод т так же, как в примере 1. Из водно-солевой фазы после сушки получают 7 кг белого порошка белка, лишенного запаха и вкуса и содержащего меньше 0,3% липидов на сухое вещество .
