Изобретение относитс к молочной промышленности и касаетс цельномолочной ее отрасли. Известен снособ производства сметаны путем сквашивани сливок 30%-ной жирности закваской , состо щей из мезофильных молочнокислых стрептококков типа Streptococcus lac- tis и Streptococcus cremoris и ароматообразователгй Streptococcus acetoinicus . и Streptococcus diacetiiactis. Сливки сква1давают 1-5% закваски при 24-25° С детом и 26-27° С зимой до образовани сгустка и достижени кислотности 65-70°Т. .Продолжительность сквашивани 13-16 ч.
