Abstract
Изобретение Относитс к биотехнологии, а именно к получению спор тест культуры дл контрол режима стерилизации в рыбоконсервной промышленности. Цель изобретени - повышение выхода спор с ВЫСОКОЙ термоустойчивостью. В состав среды входит кукурузный экстракт, дрожжи, ти- огликолиева кислота ,гидролизатказеина, гидролизат м са и вода. Питательна среда позволит увеличить выход спор до 10 кл/см"^. Изобретение может найти применение в пищевой промышленности дл контрол стерилизации продуктов. 2 табл.Изобретение относитс к биотехнологии, а именно к получению спор тест культуры дл контрол режима стерилизации в рыбоконсервной промышленности.Цель изобретени - повышение выхода спор с высокой термоустойчивостью.П р и м е р 1. На питательные среды, содержащие гидролизат м са, гидролизат казеина или их смесь, высевают культуру Clostrldlum-sporogenes шт. 25 и учитывают рост культуры и интенсивность спорообразовани на 21-28 сут. Гидролизат м са и казеина смешивают в равных количествах (по амино-амиачному азоту). Вли ние концентрации амино-амиачного азота в питательной среде на спорообразование представлено в табл.1.П р и м е р 2. На питательные среды, содержащие разные соотношени гидроли- зата казеина, гидролизата м са, кормовых дрожжей, кукурузного экстракта и тиоглико- лиевой кислоты, высевают культуру Clostridium sporogenes.После окончани процесса культивировани на 21-^28 сут. учитывают количество образовавшихс спор. Результаты представлены в табл.2.Полученными спорами контаминируют партию консервов "Кальмар натуральный". Продукт прогревают. Термоустойчивость спор сохран етс на высоком уровне 1Д121. 1°С, 0,72 мин.;Таким образом споры CJ. sporogenes. полученные на казеиново-м сной среде, обладают высокой термоустойчивостью и могут примен тьс в промышленности дл проверки и разработки режимов стерилизации консервов.Формула изобретени Питательна среда дл получени спор Clostrldlum sporogenes, включающа дрожжи кормовые, кукурузный экстракт, тиогли- колиевую кислоту, источник азота и воды, отличающа с тем, что, с целью повышени выхода спор с высокой термоустойчивостью, в качестве источника азотаС/1сiос>&The invention relates to biotechnology, namely, to obtaining a spore culture test to control the sterilization regime in the fish canning industry.
