Abstract
Изобретение относитс к кондитерской и хлебопекарной промышленности, в частности к производству мучных кондитерских изделий - вафельных листов. Цель изобретени - ускорение процесса и повышение качества изделий путем улучшени структурно-механических свойств теста. Способ производства вафельных листов предусматривает приготовление эмульсии путем смешивани белкового вещества, растительного масла, поверхностно-активных веществ, воды, соды, соли, эмульгирование полученной смеси, замес теста с введением муки, его диспергирование, отливку и выпечку вафельных листов. В изделие взамен меланжа ввод т 1,9±0,3% от количества муки пахты, при этом пахту ввод т в составе эмульсии, оптимальные свойства теста обеспечивают следующим образом: эмульгирование при выработке эмульсии провод т в течение 3±1 мин при давлении (2-4)±1 МПа, диспергирование при замесе теста провод т в течение 20±5 с при давлении 0,15±0,05 МПа. 2 з.п. ф-лы, 3 табл.The invention relates to the confectionery and bakery industry, in particular to the production of flour confectionery products - wafer sheets.
