Abstract
Изобретение относитс к молочной промышленности и может быть использовано при производстве продуктов диетического питани . Целью изобретени вл етс повышение качества, пищевой ценности продукта и расширение ассортимента. Дл приготовлени молочно-белкового диэтического продукта белок молочный пищевой смешивают с вареным желтком йца, смесь протирают, добавл ют сахар, масло сливочное, сметану, сырой ичный белок и аскорбиновую кислоту. Полученную смесь взбивают в течение 5 - 7 мин с последующим нагревом в поле токов СВЧ в течение 3 - 4 мин и охлаждением при 3 - 5°С в течение 240 - 300 мин в подпрессованном состо нии при массе груза 100 - 120 % к массе прессуемого продукта. 1 табл.The invention relates to the dairy industry and can be used in the production of dietary products. Сахар рекомендуетс вносить в смесь в количестве 4,6-5,0, аскорбиновую кислоту - 0,05-0,06%. При внесении количеств названных веществ меньше нижнего предела уменьшаютс сроки хранени продукта, ухудшаютс органолеп- тические показатели.
