Description

The invention relates to equipment for the heat treatment of food in catering and food industry.

The purpose of the invention is to reduce thermal costs.

The goal is achieved by completely expelling air from the steam jacket of the food kettle with liquid.

To achieve this goal, the entire jacket space is filled with working fluid until the air is completely displaced, and then a part of it is drained to the pre-evacuated capacity set by the drain valve, eliminating the flow of air into the jacket from the outside. As a result, an evacuated space is formed above the working fluid, which during operation of the apparatus is filled with liquid vapors that directly transfer heat to the wall of the apparatus.

The drawing shows a device for implementing a method for filling a steam jacket of a food kettle.

The device includes a pin-type boiler having a steam jacket 1, an inlet 2, a check valve 3, a drain pipe with a tap 4, a valve 5 and an additional evacuated tank 6. The drain pipe with a tap 4 is located in the lower part of the wall of the shirt 1.
