Известен способ производства жид кой закваски дл приготовлени хлеб из ржаной муки, которую готов т с применением мучной заварки lj . Недостатком известного способа вл етс длительность технологического процесса, значительный расход основного сырь - муки. Известен также способ производства жидкой закваски дл приготовлени ржаного хлеба, включающий раз водочный цикл, предусматривающий см шивание муки и воды с введением дро гасей и молочно-кислых бактерий, выбраживание смесили производственный цикл, заключающийс Е добавлении к смеси питательной среды, состо щей из ржаной муки и воды 2j . Недостатком указанного способа вл етс низкое качество готового хлеба, значительный расход основного сырь - муки, неполноценный состав питательной смеси. Цель изобретени - повьпвение качества готового хлеба, сокращение времени брожени и затрат ржаной муки. В жидкой заквась-е, одновременно живут дрожжевые грибки Saccharomyce и молочнокислые бактерии. Совместно проживание в указанной питательной среде дрожжей и молочнокислых бактерий характеризуетс симбиозом взаимодействием одних микроорганизмов с другими. Активное взаимодействие зависит от состава питательно сред|)1. Дл культивировани этих мик роорг-анизмов в производственном цик 1671 ле примен етс смесь отхода свеклосахарного производства мелассы, муки и воды. В результате увеличиваетс скорость размножени микроорганизмов, интенсифицируетс процесс спиртового и молочнокислого брожени за счет быстрого увеличени ферментативной активности микроорганизмов. В табл. 1 показано вли ние выбранного соотношени компонентов на качественные показатели закваски. Соотношение; компонентов в опыте 3 11,5:4:84,5 - 12:3:85 вл етс оптимальньм, так как позвол ет активно развиватьс в симбиозе дрожжевьм клеткам и молочнокисл1.1 бактери м . Это св зано с удачным соотношением в закваске воды, компонентов мелассы: Сахаров, аминокислот, биотина, аневрина и др. и компонентов рваной муки: глюкозы, мальтозы, аминокислот, минеральных веществ и др. В опыте 5, где примен етс смесь воды и мелассы, процесс жизнеде тельности микроорганизмов закваски резко тормозитс . Способ производства жидкой закваски осуществл ют г. следующим образом . Разводочный цикл осуществл ют с использованием в качестве основного сырь муки. При этом засевают дрожжи Saecharomvces cerevisia,fe-1 и молочнокислые бактерии Lactobacillus brevis-1, Lactobacillus casei-26, Lactobacillus plantorurn-30, Lactobacillus ferraenti-34. Температура брожени поддерживаетс 29-30°C. Количество выведенной закваски до необходимого объема увеличиваетс за счет добавлени равного количества питательной смеси, состо щей из муки и воды в соотношени х 29:71. Кислотность закваски перед каждьм освежением дл муки ржаной обойной 11-13, дл обдирной - 10-12 град. Производственный цикл приготовлени закваски в предлагаемом способе отличаетс от известного и осуществл етс с помощью специальной питательной среды, состо щей из свекосахарной мелассы, муки ржаной обдирной или обойной и воды в соотношении 4:11,5:84,5 или 3:12:85. Жидка закваска ведетс непрерывно . Каждые 2,5-3,0 ч отбирают поовину и добавл ют такое же Kojni4eство указанной питательной смеси. Влажность закваски 87-87,5%, началь на температура закваски 31-32°С, ки лотность перед отбором 11-12 град, подъемна сила 25-30 мин. В табл. 2. приведены рецептура и технологический режим приготовлени жидкой закваски в производствен ном цикле по известному и предлагае мому способам, а также даны физикехимические показатели.качества хлеба , полученного на этих заквасках. По органолептическим показател м качество хлеба, приготовленного на жидких заквасках по предлагаемому способу, соответствовало по всем показател м ГОСТа и хлебу, приготовленнс у по известному .способу. Как видно из табл. 2 на возобно ление закваски в известном способе расход муки составл ет 14,5 кг, а количество муки в 100 кг закваски равно 29 кг. В предлагаемом способе расход муки на возобновление закваски составл ет 5,75 кг, а в 100 закваски содержитс 11, 5 кг. Таким образом, п|шменение предлагаемого способа позвол ет сократить расход муки в производственном цик74 ле приготовлени закваски (из расчета на 100 кг закваски) на 17,5 кг или на 39,65%. Рецептура и технологические параметры приготовлени теста на жидкой закваске по известному и предлагаемому способам приведены в табл. При приготовлении теста из смеси разныхсортов ржаной и пшеничной муки дополнительное сырье (сахар, патоку и др.) добавл ют согласно рецептуре на тот или иной сорт хлеба . Использование предложенного способа позволит упростить процесс приготовлени жидкой закваски за счет сокращени длительности одного рабочего цикла брожени , уменьшени численности обслуживающего персонала , уменьшени количества заквасочных чанов и потерь, сокращени энергии , воды и накладных расходов. Экономический эффект в год будет складыватьс из замены 400-500 тыс.т первосортного зерна на отход свеклосахарного производства мелассу осеннего производства сахара из свеклы . As can be seen from the table. 2, in a known method, flour consumption is 14.5 kg, and the amount of flour per 100 kg of ferment is 29 kg. In the proposed method, the flour consumption for the renewal of the ferment is 5.75 kg, and in the 100 ferment it contains 11.5 kg. Thus, shaving the proposed method allows to reduce the consumption of flour in the production cycle of the preparation of the starter culture (based on 100 kg of starter culture) by 17.5 kg or 39.65%. The recipe and technological parameters of dough preparation on liquid sourdough according to the known and proposed methods are given in table. When making dough from a mixture of different varieties of rye and wheat flour, additional raw materials (sugar, molasses, etc.) are added according to the recipe for a particular type of bread. Using the proposed method will simplify the process of preparing liquid starter culture by reducing the duration of one fermentation cycle, reducing the number of staff, reducing the number of starter vats and losses, reducing energy, water and overhead costs. The economic effect per year will consist of the replacement of 400-500 thousand tons of first-class grain by the waste of sugar-beet production of molasses of autumn sugar production from beets.
