Однако при брожении дрожжи расходуют большое количество углеводов что ведет к значительньлм потер м сухих веществ муки. Кроме того протеолитические ферменты дроюкей в процессе тестоведени , активно преобразу клейковмйу, снижают газоуде живающую способность теста. При производстве пшеничншс сорто хлеба используют WfAtat гетероферментативных молочнокислых бактерий Lactobacterium fermenti-27, который вл етс кислотообразователем и интенсифивдгрует процесс тестоведени 2 . Однако -известный штамм в накопйении газа в мучных полуфабрикатах не участвует. Цель изобретен - получение нового вида шта№И молочнокислых бактерий Lactobacillus buchneri-5 активно накашшванщегб углекислый газ в мучных полуфабрикатах, что ведет к их разрьослениго. Штамм Lactobacillus buchrieri-5 поддерживают в жидкой среде № 10, МРС-1 путем пересева один раз в 25 дн. Температура роста 35-37 С в течение 2-3 сут. Пересе нную культуру хран т в услови х холодильника при +6 . . Штамм Lactobacillus buchneri-5 характеризуетс следующими морфологическими физиологическими свой .ствами. Морфологические признаки. Грампо ложительные, неподвижные, микроаэро фильные, неспорообразуюдае полочки 2-5 мкм, расположенные одиночно или ijonapHo, без включени зерен валюти Оптимальна теютература роста 37 гра Физиологические признаки. Органи ческие среды. Солодовое сусло плотностью . Через 48 ч вызывает из мененйе активной кислотности до рН 3,55 и титруемой кислотности до 10,4 град. 2 Агаризованна солодова среда Через 48 ч роста по вл етс колони в виде глубинной чечевицы. Синтетическа среда МРС-1. Через 48 ч наблюдаетс сильное помутнение среды. Энергичное газообразование и образование осадка. Среда Абу эль-Малека с глюкозой. Образует газ. , Молоко. Через 14 сут накапливает 0,01% кислоты. Желатина. Не разжижает. Отношение к углеводам. Ассимилирует галактозу, мальтозу, сахарозу, лактозу, манит. , Не ассимилирует сорбит , целлобнозу, рамнозу, маннозу. Мучна среда влажностью.75% приготовленна из пшеничной муки второго сорта за 5 ч культивировани при 37 С накапливает титруемую кислотность 13 град. Содержащую в ампуле чистую культуру L. buchneri-5 вместе с осадком стерильно засевают в колбу с 200-250 МП стерильного чменного сусла плотностью 12 5 и вьфащивают при 37с в течение 2 сут. Полученную культуру используют дл приготовлени заквасок. Приготовление молочнокислы закваски состоит в переходе со стерильной среды на несте1 шыа1 Й сз страт. Дл этого накопленную чистую культуру L;buchneri-5 молочнокислых бактерий засевают в питательную смесь дл приготовлени питательной , смевивают пшеничную муку в воду в соотношении 1:2 и культивируют при 35-38°С. Через сутки титруема кислотность молочнокислой закваски должна достигнуть 22-24 град.| Готова закваска вноситс в опару и от теста в количестве 4-6% к массе перерабатываемой муки.
