Abstract

An extraction of hops and malt together with alcohol from malt is added after fermentation of light beer and the storage time for strong and/or medium beer is the same as for light beer, as is the fermentation time. The method involves filling a tank with 5000 litres of light beer wort. Yeast is added and mixed according to the recipe. The wort and yeast are fermented for 4 days at a temp. between 8 and 15 deg.C., and after fermentation has an alcohol content of 1.6 wt.%. An extraction mixt. for medium beer of 300 litres is then mixed in with it and stored at a temp. of 10-15 deg.C. for 3-4 weeks. The medium beer is then tapped off and has a alcohol content of 3.6 wt.%. Where strong beer is required, 450 litres of hops and malt together with alcohol from malt are mixed in and the mixt. is stored at 10-15 deg.C. for 3-4 weeks. The resulting alochol content is 4.5 wt.%.
