Способ производства термообработанных макаронных изделий, предусматривающий приготовление теста из пшеничной муки или бесклейковинного крахмалсодержащего сырья, воды и добавок, уплотнение теста и формование из теста сырых макаронных изделий, обработку сырых изделий паром и их сушку, отличающийся тем, что формование теста осуществляют путем его продавливания через отверстия матрицы, нагретой до температуры более 80oС, длина отверстий которой достаточна для частичного или полного пропаривания формуемых сырых изделий при прохождении ими отверстий матрицы паром, образующимся из внутренней влаги изделий при их разогреве в отверстиях матрицы.1.
