Способ получения пектина из корзинок подсолнечника, включающий подготовку сырья к гидролизу путем его термической обработки, гидролиз-экстрагирование пектиновых веществ с последующим выделением целевого продукта, отличающийся тем, что после термической обработки сырье дополнительно подвергают обработке пектолитическим ферментным препаратом, а гидролиз-экстрагирование пектиновых веществ проводят в течение 90-150 мин.1.
