Изобретение относится к масложировой промышленности и может быть использовано при извлечении масла и белка из растительных высокомасличных материалов. Сущность: способ извлечения масла и белкового продукта из растительного масличного материала предусматривает его измельчение, влаготепловую обработку с одновременным воздействием поверхностно-активным веществом (ПАВ) в количестве 0,02-0,20%, форпрессование мезги, обработку полученного форпрессового жмыха по крайней мере одним ферментом в водной среде и разделение полученной реакционной смеси на твердую протеинсодержащую, масляную и водную фракции. При этом в качестве фермента используют препарат или мультэнзимную ферментную композицию с общей целлюлолитической активностью 80-2500 ед/г в количестве 0,005-0,300% от массы жмыха. При осуществлении изобретения может быть достигнут следующий технический результат: повышение качества и пищевой ценности извлекаемых продуктов за счет максимального сохранения всех компонентов исходного сырья; обеспечение экологической чистоты и безопасности производства за счет полного отказа от использования органических растворителей; сокращение продолжительности процесса с нескольких часов до 10-120 мин.The invention relates to the oil industry and can be used to extract oil and protein from vegetable high oil materials.
