- Способ получения мягкого сыра включает коагуляцию молока раствором молочной кислоты или молочно-кислыми бактериями, хлористым кальцием. После отделения сыворотки в белковый сгусток вносят раствор солей хлористого калия и натрия в соотношении 1 : 9 - 12 при 60 - 80°С. Сыр, получивший название "Монастырский", содержит 32 ± 1,5% жира и не более 60% влаги, сохраняет свои свойства до 20 дней.
