Биологически активный кисломолочный продукт "Ацидолакт-Наринэ" содержит белки в количестве 0,35 - 0,34,0 мас.%, жиры в количестве 0,05 - 36,00 мас. %, углеводы в количестве 1,5 - 70,0 мас.%, органические кислоты (в пересчете на молочную кислоту) в количестве 0,6 - 56,0 мас.%, витамины в количестве 0,95 - 15,90 мг на 100 г продукта, воду в количестве 4,0 - 96,6 мас.% и в 1 г продукта 106 - 109 симбиозных микроорганизмов вида Lactobacterium acidophilum по меньшей мере одного штамма группы Ер-2 со штаммом N.V.Ep-317/402, при этом соотношение названных штаммов составляет 1 : 1 - 4, соответственно. Кислотность продукта составляет 60 - 280° Т. Энергетическая ценность составляет от 20 до 540 ккал на 100 г продукта. Названный биологически активный кисломолочный продукт "Ацидолакт-Наринэ" получают путем термообработки при температуре 95 - 140°С молока, после чего его охлаждают до температуры заквашивания, вносят микроорганизмы вида Lactobacterium acidophilum, а именно по меньшей мере один штамм группы Ер-2 и штамм N.V. Ep317/402, при этом штаммы группы Ep-2 используют в количестве, обеспечивающем соотношение к количеству штамма N.V Ep317/402, равное 1 : 1 - 4 соответственно.
