Abstract

Process for drying and storage of acidophilic milks or milks fermented by various microorganisms, in powdered form for rapid reconstitution with water, comprises (a) prepg. a seed culture of an isolated lactic bacteria; (b) prepg. milk for fermentation by evaporating to 2/3 vol. and if necessary adding powdered milk to 16-20% solids; (c) sterilising, seeding and fermenting this milk at 38-41 degrees C; (d) adding sugars, thickeners or gelling agents to increase solids content and impart the necessary body on reconstitution; opt. fruit juices, flavours etc.; (e) homogenising at medium or low pressure to destroy microgels and improve fluidity; (f) spraying at 130-180 degrees C, or if total kill of bacteria is acceptable, at 180-300 degrees C; (g) opt. rehumidifying and drying in a fluidised bed; (h) storing under low humidity conditions. Separately a part of the seed culture from (a) is used to inoculate a specific medium which permits a rapid growth of the bacteria and after 4-8 hrs., culture at 38-45 degrees C, this is spray-dried under conditions to ensure max. possible survival of the cells. The spongy-dried mass is then ground, mixed with excipients to give a compsn. contg. about 1010 cells/g., then this (2 g.) mixed with 40 g. prod. from (h) (this mixt. can be reconstituted with 100-125 cc. water). The powdered prod. is then stored, pref. in individual packets. Prods. are useful for all usual therapeutic and dietetic purposes e.g., treatment of intestinal disorders such as disequilibrium of the intestinal flora following antibiotic therapy. The method assures a uniform and clean culture and gives a prod. of better taste, texture and aroma than normal acidophilic milk.
