В качестве источника йода для обогащения сахарсодержащего продукта взята пищевая добавка «Йодказеин» (гигиеническое заключение МЗ РФ №77.99.9.916.П.1466.3.99 от 25.03.99 г.). Йодказеин - йодированный молочный белок казеин, который представляет собой порошок желтоватого цвета, растворимый в воде при рН>7,5. В составе добавки йод прочно связан с белком. В качестве соединения йода используется йод однохлористый ("Пищевая промышленность" номер 1, 2001, с. 46-47). Пищевая добавка «Йодказеин» специально разработана для профилактики заболеваний щитовидной железы.
