Согласно известному способу [Авторское свидетельство СССР № 9247703, 1968 г.] получения лизоцима из яичного белка исходное сырье обрабатывают раствором хлористого натрия и едкого натра, осуществляют кристаллизацию фермента из раствора и отделяют кристаллы из стабилизированного раствора фильтрацией, при этом кристаллизацию фермента осуществляют трехкратной перекристаллизацией.
