Abstract
Description
The invention relates to the sugar industry, in particular to a method for producing molasses concentrate for long-term storage in warehouses without the use of chemicals.
1971).A known method of preservation of molasses, involving the mixing of alkaline earth metal oxides in an amount of 7-25% with molasses in the presence of bran filler (French patent No. 2075344, CL A23K 1/00, publ. 1971).
1972).There is also known a method for producing molasses concentrate, including mixing liquid molasses with an aqueous suspension of Ca (OH) 2 , drying the mixture by spraying at a temperature of 60-70 ° C and neutralizing the mass with a reagent monocalcium phosphate or phosphoric acid (US patent No. 3698911, CL 99-6 publ. 1972).
These methods for producing dry molasses do not allow the manufacture of dry molasses concentrate with a high molasses content at a pH below 8 and without the use of drying.
1990).There is also a method of producing dry molasses concentrate, which consists in mixing molasses with soybean meal (organic adsorbent) and limestone flour (mineral adsorbent) in a ratio of 4: 7: 1, drying the mixture in a drum dryer at a temperature of 120-130 ° C for 2- 3 hours, cooling, grinding and packing in plastic bags (patent SU No. 1790897 A1, class A23K 1/02, publ. 1990).
The use of these adsorbents has a number of significant drawbacks, namely the impossibility of obtaining a feed product highly concentrated in molasses (sugars), since when the molasses content is more than 50-55%, the powder is easily crumpled, sticks together and coalesces; sugars are in unprotected form from the effects of bacteria and other microorganisms; the presence of food filler with a limited shelf life (up to 6 months) makes molasses concentrate a perishable product. In addition, due to the need to dry the product after mixing, the energy consumption and the duration of the technological cycle increase.
1982).The closest in technical solution and the achieved results is a well-known method of preserving molasses, which involves mixing molasses with calcium oxide powder and grinding the resulting mass. The mixture of molasses with a powder of calcium oxide before grinding is subjected to baking until solidification, and the crushed mass is treated with concentrated acetic acid with stirring until pH 4-6 is reached (USSR patent No. 897209, class A23K 1/02, publ. 1982).
The disadvantage of this invention is that an inorganic reagent is used - calcium oxide, which, when interacted with liquid molasses moisture, turns into calcium hydroxide, which has an alkaline environment, which requires glacial acetic acid to neutralize due to its low water content. In addition, when this acid is added to the intermediate, calcium acetate, which is not a feed unit, is formed. After neutralization of calcium hydroxide with acetic acid, the protective properties of molasses are reduced, so the shelf life of molasses is reduced.
The aim of the invention is to develop a method for producing molasses concentrate for long-term storage in warehouses without the use of chemical reagents, involving the use of a natural starch food product as a moisture-absorbing agent, which leads to the suppression of the vital activity of microorganisms without the use of chemical reagents.
The goal is achieved by a method comprising mixing molasses with starch and grinding the resulting mass, characterized in that starch is introduced into a liquid molasses containing 76-80% dry matter at an ambient temperature of no higher than 40 ° C, then the mixture of starch and molasses with a paste-like consistency hardens and subjected to baking no more than 24 hours, then the product is crushed by grinding to a finely divided state.
д.The method consists in the following: 20-25% of starch by weight of molasses is introduced into liquid molasses containing 76-80% of dry matter at an ambient temperature of not higher than 40 ° C. This ratio allows you to completely bind water in molasses. In the process of mixing these components, starch hydrolysis occurs under the influence of molasses enzymes and organic acids. Molasses water chemically binds to starch to form dextrins, maltose and glucose, etc.
A mixture of starch and molasses forms a pasty consistency, which hardens and undergoes curing for no more than 24 hours. Then the product is crushed by grinding to a finely divided state and loaded into kraft bags. The product is not caking during storage.
To preserve liquid molasses, containing at least 76-80% of dry matter, 20-25% of starch is poured at a temperature of no higher than 40 ° C. At ambient temperature, starch amylase attaches the residual moisture of molasses to form dextrins, maltose, glucose, etc. The decrease in the amount of water in molasses leads to the suppression of the vital activity of microorganisms and ensures the duration of storage of molasses in warehouses due to the fact that starch amylase in the concentrate continues to absorb moisture from the environment.
The scheme for the gradual hydrolysis of starch introduced into molasses in the presence of organic acids contained in molasses by the enzymatic method (action of the carbohydrase enzyme) is as follows:
д.starch + water → dextrins → maltose → glucose, etc.
д.Carbohydrases, which break down starch molecules, are called amylases (α and β), with every fifth or sixth alpha-glycosidic linkage of the polyose chain being cleaved first to dextrins, which are then cleaved to maltose, etc.
Molasses, containing more than 80% of dry matter, loses its mobility, which makes it difficult to release technological equipment when unloading finished products, and containing less than 76% of dry matter leads to the loss of molasses sugar due to crystallization. The process of obtaining molasses concentrate is carried out at ambient temperature up to 40 ° C, because at temperatures above 40 ° C, water contained in molasses forms a starch paste, which is not a preservative agent. Starch in an amount of 20-25% ensures reliable storage of molasses concentrate in various environmental humidity conditions. The molasses-starch ratio of less than 20% does not completely bind moisture, and more than 25% is starch overrun.
This technology reliably protects molasses when stored in a warehouse at temperatures up to 20-35. The neutral pH of the medium, provided by starch, is not acidified and inhibits the course of melanoidin reactions. The presence of starch and its hydrolysis products will be beneficial when using this product in the production of ethyl alcohol.
Example. Liquid molasses in an amount of 800 ml, containing 76-80% dry matter at ambient temperature, but not higher than 40 ° C, is placed in a container into which 200-250 g of starch is added with constant stirring. In this case, a temperature change does not occur.
5.After mixing, the intermediate product in the form of a paste is poured into molds and left to bake for 24 hours until completely hardened. The hardened mass of grinding in the mill to a finely divided state. The resulting product has a pH of about 5.
The production of dry molasses concentrate allows us to expand the range of raw materials for industrial use, as well as to increase the productivity and yield of alcohol in the alcohol industry.
5,5.The fundamental difference between the proposed method for producing dry molasses concentrate from existing methods for producing dry molasses is that it allows you to get a dry product without the use of chemicals and additional drying, i.e. at ambient temperature, with a neutral pH of not more than 5.5.
