Abstract

FIELD: food industry.

SUBSTANCE: according to the said method, one places one layer of chosen size lavash onto the console designed in the form of a sheet of a sterile material. The sheet width and length are to be no less than those of the lavash layer and no more than those of the elastic sterile material bag sealed on one side. Such bag is drawn with the open side onto the sheet together with the lavash layer placed thereon against stop on the console butt-end of the sealed bag end. Then the bag upper and the lower surfaces are pressed with fingers from below and from above to the lavash layer placed on the sheet; such surfaces are positioned opposite the open aperture made in a longitudinal direction on the sheet free end; the bag with the lavash layer remaining therein is removed from the console. Then the bag with lavash is twisted into a roll; the unsealed side of the bag is positioned inside the roll. The lavash layer remaining in the bag is repeatedly twisted into a roll.

EFFECT: preservation of freshness of the lavash remaining in the bag and prevention of its spoilage during a long period of time; the roll made of the bag with lavash is space-efficient and convenient for transporting and storage.

Description

The invention relates to the baking industry, and in particular to a method for packaging thin pita bread.

It is known that pita bread can be manufactured industrially on automated lines (see, for example, RF patent No. 23234353 for the invention “An automated line for the production of thin Armenian pita bread”). In accordance with this invention, at the exit of the automated line along which the pita tape arrives, a knife is mounted for cutting this tape on rectangular pita layers of a given size, the same thickness and humidity. After cutting, the layers of pita bread are served one by one on the table of the packer. Ready for sale, the final product according to this invention is made in the form of piles of a fixed number of pita layers, which are packaged. Packages are hermetically sealed. Also, according to this invention, the finished product, ready for sale, is made by the winding mechanism in the form of rolls of pita tape of a set size. These rolls are also packaged by the packer. Packages are hermetically sealed. To increase the shelf life of the finished product according to this invention, special food additives are used, which are placed in bags with pita bread. Bags can be made of cellophane, polyethylene, lavsan, cellulose, metal foil, or a combination of these materials.

Also known is a similar method of packaging pita bread, which is described in http://hromax.ru/liniya_po_proizvodstvu_armyanskogo_lavasha.html. In accordance with this analogue, taken as a prototype, the finished product ready for sale is also made in the form of a stack of a given number of pita layers, which are wrapped with a film or put into polypropylene bags. Common disadvantages of the above methods of packaging pita bread is the need for the consumer to use part of the package piled in accordance with these methods of pita bread to unpack the package, remove from it the entire stack of pita layers or the entire roll from the pita tape. Then, for the intended use, separate from the stack the required number of pita layers or rewind the pita layer of the required length from a roll of pita tape. After that, for further storage, the remaining part of the stack of pita layers or the rest of the roll of pita tape is again placed in the bag. But at the same time, after the pita bread has come into contact with the air and hands of the consumer, it is no longer ensured that freshness is preserved and the remaining layers of pita bread or the rest of the roll from pita bread are prevented from spoiling. Also, the disadvantage of performing on these analogs of the final product in the form of a stack of stacked piles of a set number of pita layers is the bulkiness of the package with a stack of pita layers, which causes inconvenience during transportation and storage by the consumer.

In addition, the disadvantage of packaging pita bread according to the first analogue is that, to increase the shelf life of pita bread, special biological additives are placed in a package with pita bread, and these additives to one degree or another reduce the natural properties of pita bread. At the same time, a possible increase in the shelf life of pita bread due to exposure to these additives can concern only the period until the package is opened and pita bread is removed from it.

The aim of creating the proposed method of packaging pita bread proposed as an invention is to obtain, as a result of the application of the method, obtaining such a ready-to-sell pita bread in a package, part of which could be used for its intended purpose without the need to remove all pita bread from the package. As a result, to exclude contact of the part of the pita bread remaining in the packaging with the air and hands of the consumer and, thus, ensure the preservation of freshness and prevent lavash remaining in the packaging from damage.

The problem is solved by creating a method of packaging pita bread, in accordance with which they cut a layer of pita bread cut from a pita ribbon of a selected size on the console, made in the form of a sheet of sterile material. The width of the pita layer is about 35 cm, the length is up to 150 cm with a thickness of 0.2-0.5 mm. In this case, the width and length of the sheet should not be less than the width and length of the pita layer and not more than the width and length of the bag of flexible sterile material, sealed on one side, which is worn open side on the sheet with the pita layer laid on it until it stops on the end of the sheet sealed end of package. Then, press the upper and lower surfaces of the bag, which are opposite the open cutout of about 10 cm wide and about 5 cm deep, made in the longitudinal direction at the free end of the sheet, with fingers from above and below to the pita sheet laid on the sheet, and remove the package along with the remaining a layer of pita bread. After that, the bag with pita bread is rolled up and the unsealed side of the bag is placed inside the roll.

When using the proposed method for packaging pita bread, the finished product ready for sale is made in the form of a roll from a bag together with a layer of pita bread embedded in it.

The bags are made of cellophane, polyethylene, lavsan, cellulose, metal foil, or a combination of these materials. Labels may be affixed to packages.

The final product made in accordance with the proposed packaging method is used in the form of a roll from a package together with a lavash layer embedded in it as follows. Unroll the roll and take out the pita bread layer of the required length from the packet, cut it off, and the remaining portion of the pita bread layer in the packet is again rolled up with the packet into a roll. It is also possible to use a roll from a bag together with lavash embedded in it, in which, after unrolling the roll to the required length, simply cut off part of the bag from the roll together with the lavash of the required length laid in it. The remainder of the package part of the layer of pita bread is again rolled up with the package into a roll. And the cut off part of the lavash formation is freed from the cut off part of the package and the lavash is used for its intended purpose.

Achieved by the proposed method for packaging pita bread, the technical result consists in obtaining, using the method, a finished product ready for sale in the form of a roll from a package together with a pita layer embedded in it. At the same time, the consumer of the product gets the opportunity to use part of the lavash layer in the package without having to remove the entire layer from the package and thereby ensure freshness and prevent lavash remaining in the package from spoiling. In addition, the compactness of the pita bread in the package is ensured by folding the bag along with one layer of pita bread in it. The compactness of the package roll with a layer of pita bread embedded in it provides convenience during its transportation and storage.

To insert a layer of pita bread in a package in accordance with the proposed method, a device is used made in the form of a sheet of sterile material cantilevered on a rack. In particular, the stand may be movable and the sheet may be made of stainless steel. In this case, the width and length of the sheet should not be less than the width and length of the pita layer and not more than the width and length of the bag of elastic sterile material, sealed on one side, which is put on the sheet with the open side together with the pita layer laid on it. In addition, at the free end of the sheet in the longitudinal direction, an open cut is made of a width of about 10 cm and a depth of about 5 cm. The cut is made in the middle of the free end of the sheet.

To verify the practical applicability of the proposed method for packaging pita bread, several devices were made for placing pita bread in bags and for a long time using these devices, pita layers were placed in bags. Moreover, in each package was placed only one layer of pita bread. According to packers, these devices made it easy and quick to place pita layers in packages. Each bag with the lavash layer embedded in it was rolled up, and the unsealed side of the bag was placed inside the roll, and a label with the description of the pita bread was attached to the roll.

According to consumer reviews, a package rolled into a roll together with one layer of pita bread embedded in it allows you to use part of the layer of pita bread in the package without having to remove the entire layer of pita bread from the package and thus ensures the preservation of freshness and prevention of spoilage remaining in the package pita bread for a long time. Consumers also noted that, to ensure compactness, they again rolled up the remaining part of the pita bread layer into a roll, which took up little space and was convenient for temporary storage.

Thus, the possibility and expediency of using the proposed method for packaging pita bread have been practically confirmed.
