Этот результат достигается тем, что в способе производства квашеного овощного полуфабриката для салатов, предусматривающем подготовку овощного компонента и его шинковку, приготовление закваски путем вываривания отходов овощного компонента, фильтрации отвара, его охлаждения до 30oС, внесения 1% чистой культуры Lactobacillus plantarum и выдержку в течение 3 суток при температуре 25-35oС, внесение закваски и соли в нашинкованный овощной компонент, ферментацию при температуре 18-24oС и фасовку в потребительскую тару, согласно изобретению в качестве овощного компонента используют топинамбур, который в процессе подготовки подвергают щелочной очистке от кожицы при концентрации щелочи 3-3,5% и температуре 80-85oС в течение 4-5 минут, вываривание отходов топинамбура в воде осуществляют при гидромодуле 4:1, а ферментацию осуществляют в течение 5-7 суток при следующем соотношении компонентов по массе:

Топинамбур подготавливают путем мойки до полного удаления загрязнений, инспекции, щелочной очистки от кожицы и повторной мойки. Щелочную очистку от кожицы осуществляют при концентрации щелочи 3-3,5% и температуре 80-85oС в течение 4-5 минут. Режимные параметры очистки выбраны на основании серии опытов как оптимальные с точки зрения наиболее полного удаления кожицы. При этом интервал температур является типичным для процесса щелочной очистки овощных культур, нижние пределы интервалов позволяют добиться наилучшего результата при очистке свежеубранного топинамбура, а верхние пределы при очистке топинамбура после сезонного хранения. Подготовленный топинамбур шинкуют соломкой с геометрическими параметрами, характерными для овощей, предназначенных для приготовления салатов с поперечным сечением 3х3 мм и длиной около 40 мм. Мелочь сепарируют на ситах. Отсепарированная мелочь, некондиционные клубни, отобранные в процессе инспекции и очистки топинамбура, являются отходами, которые по ходу технологического процесса накапливают, а затем направляют на переработку в цикле получения закваски. Собранные отходы измельчают и заливают четырехкратным количеством воды. Ферментацию топинамбура осуществляют с использованием традиционных средств: дошников или бочек, гнета, пленочных покрытий или вкладышей, при традиционном температурном режиме 18-24oС. Однако, поскольку как состав питательной среды для приготовления закваски, так и состав ферментируемого сырья достаточно сильно отличаются от традиционно используемых, время ферментации топинамбура до достижения оптимальных органолептических свойств составляет всего 5-7 суток.
