Известен способ приготовления молока, заключающийся в его очистке от механических примесей, гомогенизации, нормализации по жирности, пастеризации и охлаждении (Степанова Л.И. Недостатком указанного способа является низкое содержание в полученном молоке биологически ценных веществ: фосфолипидов, витаминов и минеральных элементов, особенно железа, играющих важную роль в регулировании обменных процессов в живом организме. Молоко является хорошим продуктом для повседневного питания здоровых людей, но из-за низкого содержания в нем биологически ценных веществ не может оказывать эффективного влияния на мобилизацию иммунной системы людей детского и пожилого возраста. Задача решается тем, что в способе приготовления диетического молока, включающем очистку молока от механических примесей, гомогенизацию, нормализацию по жирности, пастеризацию и охлаждение, перед пастеризацией при температуре 20-25oС в молоко вводят масложировой фосфолипидный продукт, полученный путем четырехкратного смешивания предварительно нагретых пищевых растительных фосфолипидов с органическим растворителем, добавления в растворитель перед третьим смешиванием 5-10% к массе фосфолипидов раствора смеси лимонной и янтарной кислот в обводненном ацетоне, взятой в количестве 1-2,5% к массе фосфолипидов, при соотношении кислот в смеси (1:1)-(3:1), разделения фаз на раствор нейтральных липидов в растворителе и фосфолипиды с последующей сушкой фосфолипидов, при этом массовая доля масложирового фосфолипидного продукта составляет 0,5-1,5% к массе молока, а вводят его в виде молочно-фосфолипидной эмульсии при соотношении масложировой фосфолипидный продукт - молоко (1:7) - (1:12).The problem is solved in that in a method for the preparation of dietary milk, including purification of milk from mechanical impurities, homogenization, normalization by fat content, pasteurization and cooling, before pasteurization at a temperature of 20-25 o C, an oil-fat phospholipid product obtained by four-fold mixing of preheated edible vegetable phospholipids with an organic solvent, adding to the solvent before the third mixing 5-10% by weight of phospholipids of a solution of a mixture of citric and succinic acids in flooded acetone taken in an amount of 1-2.5% by weight of phospholipids, with a ratio of acids in the mixture (1: 1) to (3: 1), phase separation into a solution of neutral lipids in a solvent and phospholipids, followed by drying of phospholipids, this mass fraction of fat-and-oil phospholipid product is 0.5-1.5% by weight of milk, and it is introduced in the form of a milk-phospholipid emulsion with a ratio of fat-and-oil phospholipid product - milk (1: 7) - (1:12).
Молоко, приготовленное заявляемым способом, характеризуется высокими органолептическими показателями: оно приобретает приятный, явно выраженный привкус топленого молока. Изменяется цвет молока: в зависимости от количества добавляемого масложирового фосфолипидного продукта оно меняет свой цвет от светло-кремового до кремового. Особенно оно полезно детям и пожилым людям. Фосфолипиды, содержащиеся в масложировом фосфолипидном продукте, совместно с молочным жиром и жиро- и водорастворимыми витаминами, содержащимися в молоке, образуют, как нами показано экспериментально, комплексы, которые ускоряют обменные процессы в организме детей, способствуя их росту, укрепляют здоровье; в пожилом возрасте они препятствуют развитию атеросклероза, улучшают мозговую деятельность и деятельность центральной нервной системы. Молоко, очищенное от механических примесей (0,5 кг), прошедшее гомогенизацию, нормализуют с доведением его жирности до 2,5%, после чего в него вводят масложировой фосфолипидный продукт, полученный путем четырехкратного смешивания предварительно нагретых пищевых растительных фосфолипидов с органическим растворителем, добавления в растворитель перед третьим смешиванием 5% к массе фосфолипидов раствора смеси лимонной и янтарной кислот в обводненном ацетоне, взятых в количестве 2,5% к массе фосфолипидов, при соотношении кислот в смеси 1:1, разделения фаз на раствор нейтральных липидов в растворителе и фосфолипиды с последующей сушкой фосфолипидов в диэтиловом эфире. Из масложирового фосфолипидного продукта готовят молочно-фосфолипидную эмульсию, смешивая его с частью молока таким образом, что соотношение масложировой фосфолипидный продукт:молоко составляет 1:8. Эмульсию вводят в молоко при температуре 22oС в количестве 33,7 г, что обеспечивает получение диетического молока с массовой долей масложирового фосфолипидного продукта, равной 0,5%. После этого молоко и молочно-фосфолипидную эмульсию перемешивают, проводят ее пастеризацию при температуре 75oС в течение одной минуты и охлаждают до 8oС.Example 1.
