Далее клубни измельчают до пюреобразного состояния, например, на волчке, прогревают до 80-90oС, охлаждают до 35-55oС для подавления деятельности микрофлоры и более полного гидролиза инулина и вводят ферментный препарат инулаваморин или смесь трех ферментных препаратов: целлоконингина или целловиридина и пектофоетидина или пектаваморина и амилосубтилина в приблизительно равных количествах, в количестве 1-2% от массы сухих веществ пюре. Время ферментолиза составляет 7-10 часов при использовании ферментных препаратов П10х и Г10х или 20-24 часа при использовании ферментных препаратов П3х и Г3х, обладающих меньшей активностью. При необходимости осуществляют корректировку уровня рН до оптимального, который, как и температура охлаждения пюре перед ферментолизом, зависит от природы ферментных препаратов. Для грибных ферментных препаратов задают рН 4,5-6,5 и температуру 35-45oС, а для бактериальных ферментных препаратов рН 6,0-7,5 и температуру 40-55oС. После завершения ферментолиза пюре направляют на сушку. Температуру сушки предпочтительно задают в интервале 55-65oС для наиболее полного сохранения в продукте биологически активных веществ, а сушку осуществляют до конечной влажности 6-12%, обеспечивающей отсутствие комкования после повторного измельчения при отсутствии удаления связанной влаги. Следует отметить, что сушка пюре происходит более равномерно, чем ломтиков, что повышает однородность гранулометрического состава порошка, влажности его частиц, снижает вероятность локального перегрева и подгорания, что в конечном итоге повышает качество целевого продукта. При производстве порошка, используемого непосредственно в пищу или в составе пищевых добавок и фармпрепаратов, порошок, полученный после повторного измельчения, подвергают обработке для снижения микробиальной обсемененности, желательно путем ультрафиолетового облучения, в наименьшей степени влияющего на изменение биологически активных веществ.
