Известен способ определения качества (хлебопекарных свойств) муки пшеничной хлебопекарной, основанный на проведении пробной лабораторной выпечки хлеба по стандартному методу согласно требованиям ГОСТ 27699-88 [1]. Для этого берут строго определенное количество ингредиентов: муки пшеничной хлебопекарной по ГОСТ 26574-85 [2], а также соли, дрожжей и воды, исходя из содержания в муке (для каждого сорта) сухого вещества. Дозирование сырья, включая воду, ведется по массе. Тесто замешивают вручную или на лабораторной тестомесильной машине, при этом температура теста должна быть +30...+32oС, относительная влажность воздуха от 80 до 85%. Тесто выбраживают в термостате при температуре воздуха +32oС в течение 170 минут и выпекают в лабораторной печи при температуре от +200 до +230oС в течение от 28 до 55 минут в зависимости от сорта муки.There is a method of determining the quality (baking properties) of wheat flour, based on a test laboratory baking of bread according to the standard method according to the requirements of GOST 27699-88 [1]. - устройство для отмывания клейковины МОК-1;
- тестомесилка лабораторная ТЛ1-75;
- дозатор воды ДВЛ-3;
- приспособление У1-УФК для формовки клейковины;
- измеритель деформации клейковины ИДК-1;
- стабилизатор температуры воды У1-ЕСС-60;
- весы лабораторные по ГОСТ 24104-88;
- термометры стеклянные жидкостные;
- лабораторная посуда;
