Abstract
Description
The invention relates to the dairy industry and can be used in the manufacture of dairy treatment and prophylactic products and / or food and feed additives based on whey and representatives of the normal microflora of the human body.
25.11.96. A known method for producing a dairy product, including the introduction of thermophilic lactic acid streptococci GOCTP.RU.PP.20.11.2069 in whey, heat treatment of whey and neutralization with alkali. Before, during or after sterilization, whey is subjected to dispersion and / or extraction and / or emulsification in various sequences and combinations, see patent of the Russian Federation 2097981, class A 23 C 21/00, from 11.25.96.
The disadvantages of this method are the complexity and high cost of its implementation due to the need for special expensive equipment for the dispersion, emulsification, extraction of whey, as well as the low nutritional value of the resulting product due to the unilateral nature of the effects of the selected microorganisms.
Lactobacterium plantarum 8
Lactobacterium plantarum 296,
Lactobacillus acidofhilus,
Bifidobacterium longum 379 M,
Bacterium bifidum 791,
Bacterium bifidum 1,
Bifidobacterium adolescentis MC 42,
Streptococcus thermophilus T-50.A known method for producing a dairy product, including sterilization of whey by boiling it, subsequent cooling to a fermentation temperature, introducing a culture of microorganisms: strains

Streptococcus thermophilus T-50.
23.02.95. Sowing the above crops is kept in a sterile inert gas, in particular carbon dioxide, with continuous stirring, see the patent of the Russian Federation 2092068, class A 23 C 21/00, from 23.02.95.
This technical solution is taken as a prototype of the present invention.
According to the authors of this method, it can improve the therapeutic and dietary properties of the product.
However, sterilization of whey leads to a decrease in the nutritional value of the resulting product due to the destruction of nutrients contained in whey, including vitamins, at the sterilization temperature.
The method includes complex and expensive operations: maintaining crops in a sterile inert gas environment with continuous stirring. This requires special equipment that has a very high cost. However, the selected microorganism cultures require the aging conditions described above.
The present invention is based on the solution of the problem of creating a relatively simple and inexpensive effective way to obtain a dairy product based on the processing of whey, which would provide high nutritional value of the resulting product with its stable quality and increased shelf life.
Streptococcus salivarius subspecies thermophilus - 20 - 40
Lactobacillus delbruckii subspecies bulgaricus - 20 - 40
Lactobacillus delbruckii subspecies lactis - 20 - 40

According to the invention, this problem is solved due to the fact that the method of obtaining a dairy product involves heat treatment of whey, cooling it to a fermentation temperature, introducing a culture of microorganisms and subsequent fermentation, while a combination of lyophilized dried cultures of microorganisms is used for fermentation in the following ratio, wt. %:
Streptococcus salivarius subspecies thermophilus - 20 - 40
Lactobacillus delbruckii subspecies bulgaricus - 20 - 40
Lactobacillus delbruckii subspecies lactis - 20 - 40
The applicant is not aware of any sources of information containing information about a technical solution identical to the features given in the claims of the present invention. This determines, in the applicant's opinion, whether the invention meets the criterion of "novelty."

This, according to the applicant, indicates that this decision meets the criterion of "inventive step".
The claimed method in a specific example is implemented as follows.
Whey with an acidity of not more than 60 deg.T and a density of at least 5% was subjected to heat treatment at a temperature of 38 o C to 42 o C, cooled to a fermentation temperature of 40 ± 2 o C, treated with sodium hydroxide solution, adjusting the pH of the serum to 6 4-6.7. Then, in a specific example, a combination of freeze-dried cultures of microorganisms deposited in the All-Russian collection of Industrial Microorganisms of the State Research Institute of Genetics: Streptococcus salivarius subspecies thermophilus B 2180-108, Lactobacillus delbruckii subspecies bulgaricus B 2367-6, lacobus bacillus bacillus bacillus bacillus bacillus, 2367-6 ep, with their ratio 1: 1: 1 in the amount of 300 g per 1 ton of serum.
Fermentation was carried out for 5 hours. Then the whey was treated with sodium hydroxide to adjust the pH to 6.4. Then evaporation was carried out and the concentration of solids in the final product was adjusted to 40 ± 5 wt.%.
You can use any other strains of microorganisms of these species.
The resulting product was cooled to a temperature of 20 ± 5 o C and packaged.
The leaven used in the present method extremely efficiently converts milk sugar into lactates, glucose and galactose. This is because the combination of microorganisms selected after lengthy experiments is practically optimal according to the applicant.
1. The resulting product has the following main characteristics, table. 1.
2. Microbiological indicators are given in table. 2.
The resulting product can be used in diet therapy of intestinal dysbiosis, gastric ulcer and duodenal ulcer, in the complex treatment of respiratory tuberculosis in children and adults, as an additive introduced into food products.
