Abstract
Description
The invention relates to the food industry, namely to the confectionery industry, and is a method for the production of flour confectionery.
(1). A known method for the production of flour confectionery products, including the preparation of an emulsion, mixing flour with prescription components, forming dough pieces, baking (1).
At the same time, the recipe for flour confectionery products usually includes high-calorie refined products, such as sugar, premium wheat flour, invert syrup, which practically do not contain useful biologically active substances, functional dietary fiber.
(2). Closest to the proposed is a method of manufacturing bakery products containing dietary fiber, including the preparation of an emulsion, mixing flour with prescription components, molding, baking, in order to increase their biological value and reduce calorie content (2).
Currently, the use of pectins is based on their colloidal, gelling and stabilizing properties, so they are used in the production of marmalades, jams, jellies, marshmallows, marshmallows.
The objective of the invention is to increase the biological value of flour confectionery products and improve their quality.
0,5:3-1:2. The problem is achieved in that in the method for the production of flour confectionery products, including the preparation of an emulsion, mixing flour with recipe components, molding and baking, the difference is that when preparing the emulsion, a combination of pectin and microcrystalline cellulose is additionally added in an amount of 1-3% by weight flour, while the ratio of pectin and microcrystalline cellulose is 0.5: 3-1: 2.
The biological value of flour confectionery products is increased by enriching them with soluble and insoluble dietary fiber - pectin and microcrystalline cellulose, which can remove toxic substances, heavy metals, radionuclides from the human body, affect metabolic processes in the body, and reduce the risk of cardiovascular diseases and diseases gastrointestinal tract. Soluble and insoluble functional dietary fiber must be present daily in the human diet.
The introduction of a combination of pectin and microcrystalline cellulose leads to an improvement in the structural and mechanical properties of the confectionery dough.
Our studies have shown that the presence of a mixture of pectin and microcrystalline cellulose slows down the process of swelling of flour proteins and, as a result, reduces the proportion of gluten in the dough.
This effect is observed due to the fact that, firstly, pectin and microcrystalline cellulose located in a hydroxyl-containing medium are able to retain a large amount of water due to the formation of associative bonds with the medium, and secondly, microcrystalline cellulose adsorbed on the surface of starch grains and globular flour proteins, lowers their ability to swell and aggregate.
It is known that the elastic protein properties of the dough made from wheat flour are provided by a strong protein framework - gluten. A reduction in gluten in a pastry dough leads to a decrease in its elastic properties, an increase in ductility, and makes it more technologically advanced.
So, when a combination of pectin and microcrystalline cellulose in the ratio of pectin and MCC 1: 2 was introduced into the cookie recipe, the content of crude gluten in the dough was reduced by 2–3 times, which led to a decrease in the elastic properties of the dough by 25–30% compared to cookies without adding pectin and microcrystalline cellulose.
It is known that sugar and fat prevent the swelling of flour proteins and the formation of gluten, therefore, often the introduction of a large number of these components into the formulation is due to a specific technology involving the manufacture of plastic dough products.
The use of a combination of pectin and microcrystalline cellulose makes it possible to reduce the amount of sugar and / or fat in the formulation of flour confectionery products.
Products prepared using pectin and microcrystalline cellulose have high technological and organoleptic characteristics.
8-10%. In the production of flour confectionery from elastic dough (lingering cookies, crackers), the introduction of the proposed combination of food additives can reduce (or completely eliminate) the dosage currently used in the production of flow-mechanized lines of plasticizer improvers - sodium pyrosulphite or enzyme preparations of amylolytic and proteolytic action and in addition to reduce the aging process by 30-50%, which allows to intensify the process of production of cookies by 8-10%.
The introduction of a combination of food additives containing pectin, due to its high retention capacity, prevents flour confectionery from drying out and extends their freshness.
Microcrystalline cellulose is not absorbed by the human body, therefore, its introduction into the recipes of flour confectionery products can reduce their calorie content.
The method is as follows.
1:2.An emulsion is prepared from all the recipe components except the flour, the flour is mixed with the recipe components, the dough pieces are formed and baked. In the preparation of the emulsion, a combination of pectin and microcrystalline cellulose is added in an amount of 1-3% by weight of flour, while the ratio of pectin and microcrystalline cellulose is 0.5: 3-1: 2
Example 1. Cooked lingering cookies. For this, an emulsion was preliminarily prepared from all formulation components except flour: sugar, molasses, margarine, egg powder, vanilla powder, salt, soda and a combination of pectin and MCC in an amount of 3% by weight of flour, in a 1: 2 ratio of pectin and microcrystalline cellulose.
Then, mixing flour and emulsion, they knead the dough with a humidity of 27% for 30 minutes at a temperature of 36-38 o C. After kneading the dough was aged for 15 minutes, then it was subjected to repeated rolling, molding and baking at a temperature of 220-240 o C for 4-5 minutes.
