Abstract

FIELD: food industry, particularly, technology of juices production. SUBSTANCE: bitter substances are extracted from citrus fruits by nonpolar liquefied gas. Extracted fruits are treated by extract prepared at extraction with nonpolar liquefied gas of biomass of microorganisms Saprolegnia parasitica and aged for 3-8 h. Then fruits are crushed by ultrasound in presence of peroxidase and blended with sugar syrup. EFFECT: increased stability of juice to microbial spoilage.

Description

 The invention relates to a technology for the production of a drink based on citrus juice with pulp.

 A known method for the production of a clouded beverage, including the extraction of bitter substances from flavado citrus fruits with a non-polar extractant, their crushing by ultrasound in the presence of peroxidase and mixing with sugar syrup (RU, 2060694 C1, 05.27.96).

 The disadvantage of this method is to obtain a drink prone to microbial spoilage.

 The technical result of the invention is to increase the resistance of the drink to microbial spoilage.

This result is achieved in that in a method for producing a clouded beverage, including extracting bitter substances from flavado citrus fruits with non-polar liquefied gas, crushing them with ultrasound in the presence of peroxidase and mixing with sugar syrup, according to the invention, the fruits are treated with a lipid-containing biomass extract of Saproleg microorganisms 0.5-10 4 mg / t in terms of the total content of arachidonic and eicosapentaenoic acids and can withstand 3-8 hours

 This allows you to increase the resistance of the drink to microbial spoilage.

 The method is implemented as follows.

 Citrus fruits are extracted with non-polar liquefied gas, such as nitrogen or its nitrous oxide, removing bitter substances from flavedo. The dry biomass of Saprolegnia parasitica microorganisms is extracted with a non-polar extractant, for example, hexane or liquid carbon dioxide, the miscella is separated and the extractant is distilled from it to obtain an extract containing mainly polyunsaturated higher fatty acids, most of which are arachidonic and eicosapentaenoic acids. The extracted fruits are treated with the extract in the amount indicated above and kept for 3-8 hours. As is known, this leads to the stimulation of nonspecific immune responses of plants and the synthesis of phytoalexins. Then the fruits are crushed by ultrasound in the presence of peroxidase to enhance the structure-forming properties of native pectin substances and the resulting juice is blended with pulp and sugar syrup. Thus obtained drink contains phytoalexins, which, depending on the amount, slow down or completely eliminate its microbial spoilage. The amount of phytoalexins depends on the type and physiological state of the fruit.

 Thus, the proposed method improves the resistance of the drink to microbial spoilage.

A method for the production of a clouded beverage, including extraction of bitter substances from flavado citrus fruits with non-polar liquefied gas, their ultrasonic crushing in the presence of peroxidase and mixing with sugar syrup, characterized in that the fruits are treated with a lipid-containing extract of the biomass of Saprolegnia microorganisms in the amount of 0.5 - 10 parasica 4 mg / t in terms of the total content of arachidonic and eicosapentaenoic acids and can withstand 3 - 8 hours
