Полученный хитозан промывают этанолом и ацетоном, сушат на воздухе. Выход хитозана по хитину 18 г (82% от теоретического) степень деацетилирования 94-98% Характеристическая вязкость раствора хитина в 2% уксусной кислоте (η)25,0.
