), включающий измельчение ягод с получением мезги, отличающийся тем, что в нее вносят смесь ферментных препаратов пектолитического энзима VINOFERM zymex и целлюлолитического ферментного препарата БРЮЗЗАЙМ BGX концентрацией 0,01% к массе мезги при соотношении ферментных препаратов 1:1, проводят гидролиз в течение 1-1,5 ч при температуре 40-45°С при постоянном перемешивании, нагревание смеси до температуры 70-75°С в течение 5-6 мин, последующее охлаждение до температуры 30-35°С, прессование для отделения твердых частиц от жидкой фракции, концентрирование под вакуумом при температуре 55-65°С до содержания сухих веществ в концентрате 42-45%.
