Устройство для кристаллизации маргарина, включающее горизонтально расположенный корпус с входным и выходным патрубками и последовательно расположенные в корпусе секции состоящие из продуктовой части в виде горизонтальных щелевых каналов с расположенными внутри скребковыми лопастями закрепленными радиально на приводных валах, и охлаждающей части, выполненной в виде установленной вертикально щелевой решетки с двойными стенками для прохода хладагента, отличающееся тем, что, с целью повышения качества маргарина за счет полного очищения поверхности продуктовых секций скребками, продуктовые секции в сечении перпендикулярном приводному валу имеют форму равноусеченного с двух сторон, соприкасающихся с другими секциями круга, а длина каждой секции равна произведению радиуса круглой стенки продуктового канала на величину 20,5, при этом лопасти со скребками закреплены на приводном валу и повернуты друг относительно друга на 90°, в то время как лопасти со скребками соседней секции повернуты относительно их на 45° и вращаются в противоположном направлении с такой же частотой.
