Abstract
Способ получения симбиотического кисломолочного продукта включающий нормализацию исходного сырья - коровьего молока и соевого молока, пастеризацию, гомогенизацию смеси, охлаждение до температуры заквашивания, внесение закваски, содержащей Lactobacillus acidophilus и кефирные грибки в количестве 2-5% от объема смеси, сквашивание при 23-28°С до кислотности 70-100°Т, охлаждение полученного сгустка, выдержку, расфасовку готового продукта, отличающийся тем, что соевое молоко получают методом экстрагирования водой при температуре 85°С водорастворимых веществ из чистых, сухих, измельченных семян сои, разделении центробежным способом суспензии, стерилизации соевого молока при температуре 102-105°С с выдержкой 2 мин, охлаждении до температуры 6-8°С, перед пастеризацией в смесь вносят компоненты при следующем соотношении, мас.%: ! соль 0,03-0,08 сахар 0,3-0,8 сухое обезжиренное молоко 1,0÷4,5 ! в качестве лактобактерии Lactobacillus acidophilus используют Lactobacillus acidophilus БЗ-АВ в количестве 2-3% от объема смеси, выдержку продукта проводят после расфасовки.
