Abstract

The raw material, partic. waste meat, bone, etc. with a max. moisture content of 80% and a max. grain size of 150 mm, is subjected to a continuous process comprising (a) 15-40 mins. at 130 degrees C and a mechanical pressure of 5-10 kgf/cm2 to reduce granule size to 50 mm max. and moisture to 50% max. with a fat contents 12-20%. This stage also constitutes primary sterilisation. (b) Further sterilisation and fat septn. at 130 degrees C for 30-60 mins.(c) 30-60 mins. in each of three successive grinding vessels at 130 degrees C and 5-10 Kgf/cm2 which reduces granule size to 3 mm, fat content 3 12% and moisture to 12% as sterilisation is completed. The prod. has a min. protein content of 25% and 4% of sodium chloride. All process heating is indirect and the prod. is not exposed to atmos. or to direct contact with heating fluid. Heating fluid is pref. produced by a burner delivering hot gas at 700 degrees to 1000 degrees C. Exhaust gases heat a heat exchanger which transmits heat to an air current. Fans are used to circulate exhaust gases and hot air.
