Abstract
Przedmiotem zgłoszenia jest kompozycja strukturyzowanych tłuszczy jadalnych oraz sposób otrzymywania kompozycji strukturyzowanych tłuszczów jadalnych. Bardziej szczegółowo zgłoszenie dotyczy dziedziny jadalnych tłuszczów pochodzących z olejów roślinnych oraz zwierzęcych wolnych od tłuszczów trans oraz zanieczyszczeń obejmujących 3-monochloropropano-1,2-diol (3-MCPD), 1,3-dichloropropanol (1,3-DCP), 2-monochloropropano-1,3-diol (2-MCPD) i wolnych kwasów tłuszczowych (FFA) dla dobrego profilu sensorycznego, których właściwości takie jak profil kwasów tłuszczowych, temperatura topnienia i właściwości krystalizacyjne mogą być dostosowane do indywidualnych potrzeb odbiorców. W szczególności zgłoszenie dotyczy sposobu otrzymywania jadalnych tłuszczów, zawierających kompozycje jednonienasyconych i/lub wielonienasyconych kwasów tłuszczowych, które mogą być stosowane do wytwarzania jadalnych produktów spożywczych i nutraceutycznych, całkowicie wolnych od izomerów trans oraz innych zanieczyszczeń.
