Abstract

Przedmiotem zgłoszenia jest sposób wytwarzania probiotycznych liofilizowanych dań dla dzieci o zaprojektowanych właściwościach funkcjonalnych, który obejmuje znane metody jakimi przetwarza się surowce warzywne, owocowe lub mięsne, a następnie wytwarza się z nich danie, według dowolnej znanej receptury, w jakim obróbkę termiczną surowców prowadzi się w maksymalnej temperaturze do 90°C, a po uzyskaniu gotowego dania schładza się je w czasie nie dłuższym niż 3 godziny i następnie zamraża w porcjach, których wysokość zajmowana przez potrawę nie jest wyższa niż 5 cm, aż do osiągnięcia temperatury poniżej -20°, po czym zamrożone danie poddaje się dehydratacji metodą suszenia liofilizacyjnego w liofilizatorze, poprzez umieszczenie zamrożonych porcji dań równomiernie na półkach grzejnych urządzenia liofilizującego, a otrzymany susz rozdrabnia się w zależności do wielkości cząstek w zakresie 0 – 5 mm i dodaje się do niego nie mniej niż 10 9 JTK (jednostek ilościowych w zakresie liczebności) mieszaniny szczepów bakterii, jaka zawiera co najmniej: a. BIFIDOBACTERIUM ANIMALIS SSP. LACTIS Lafti® B94 AF, korzystnie w ilości od 20 do 70% (procentowego udziału w zakresie liczebności), korzystnie ok. 55%, b BIFIDOBACTERIUM INFANTIS Rosell®-33 (R0033) AF - , w ilości od 2% do 10% (procentowego udziału w zakresie liczebności),korzystnie ok. 5%, c. LACTOBACILLUS RHAMNOSUS GG AF -, w ilości od 20% do 50%, korzystnie ok 40%, a następnie konfekcjonuje się porcje produktów w systemie flow-pack, gdzie porcja ma gramaturę od 20 g - 100 g i jest rekomendowana jako porcja jednorazowa. Przedmiotem zgłoszenia są ponadto probiotyczne liofilizowane dania dla dzieci o zaprojektowanych właściwościach funkcjonalnych otrzymane powyższym sposobem.
