Abstract

Sposób jednoczesnego wytwarzania enzymatycznego modyfikatu i hydrolizatu skrobiowego według wynalazku polega na tym, że wodną zawiesinę ziarn skrobi o zawartości od 5 do 40% suchej substancji skrobi, korzystnie 20%, poddaje się reakcji enzymatycznej, z użyciem enzymów amylolitycznych w dawce od 100 do 4000 cm3/t suchej substancji skrobi, w temperaturze poniżej 50°C, korzystnie 45°C, trwającej od 1 do 24 godzin, korzystnie 12 godzin, uzyskując, po rozdziale mieszaniny reakcyjnej, jako fazę stałą -modyfikat w formie nierozpuszczalnej w wodzie o temp. 20°C, stanowiący od 51% do 98% suchej substancji skrobi wprowadzonej do reakcji oraz jako fazę ciekłą - hydrolizat, stanowiący od 2% do 49% suchej substancji skrobi wprowadzonej do reakcji. Przedmiot wynalazku może znaleźć zastosowanie w przemyśle przetwórstwa skrobi, szczególnie w produkcji modyfikatów skrobiowych do celów spożywczych i technicznych oraz hydrolizatów skrobiowych - maltodekstryn lub niskoscukrzonych syropów skrobiowych.The method of simultaneous production of the enzymatic modifier and starch hydrolyzate according to the invention consists in the fact that an aqueous suspension of starch granules with a content of 5 to 40% of dry starch substance, preferably 20%, is subjected to an enzymatic reaction using amylolytic enzymes in a dose of 100 to 4000 cm3 / t dry starch, at a temperature below 50 ° C, preferably 45 ° C, lasting from 1 to 24 hours, preferably 12 hours, obtaining, after the separation of the reaction mixture, as a solid phase -modifier in a form insoluble in water at a temperature of 20 ° C, constituting from 51% to 98% of the dry substance of starch introduced into the reaction and as a liquid phase - hydrolyzate, constituting from 2% to 49% of the dry substance of starch introduced into the reaction. The subject of the invention may find application in the starch processing industry, especially in the production of starch modifiers for food and technical purposes and starch hydrolysates - maltodextrins or low-sugar starch syrups.
