The quality of chitosan, its degree of deacetylation and molecular weight (degree of polymerization), and thus its functional properties, depend on the conditions of the technological process of chitin production, on the conditions of its acetylation, as well as on the species and condition of the raw material, while the fact that there is always a bound covalent bonds with proteins and is built into the mineral building material of the armor of organisms, and such a structure is often supplemented with lipids, lipoproteins and carotenoids, thus creating a raw material that is difficult to chemically process. Hence the necessity to use elevated temperatures, prolonged action of chemicals and the use of a large excess of them. Usually, the process of obtaining chitosan requires the use of several stages of treatment, preceded by isolation from the chitin raw material - as is the case with the invention known from US Patent No. 2,040,879. Also, the method of direct preparation of chitosan according to Polish patent specification No. 119 931 provides for at least two-stage treatment of the raw material with chemicals, the first of which consists in the perforation effect of nanohydrogen chloride solution, and then a large excess of deacetylating reagent in the form of a concentrated sodium hydroxide solution, preferably 50% with constant stirring and maintaining a solid to liquid ratio of 1:15 to 1:50 at 360 K for 1 hour. The aim of the invention is to develop a simple, economic a method enabling the deacetylation of O-chitin bound in the raw material, in a way that does not require its prior isolation, removal of the ballast material in the form of lipids, minerals, and in a way that eliminates the degradation and configuration changes of 0-chitin. The method of deacetylating O-chitin bound from organisms of marine origin, especially the strings of squid by treating them under constant stirring and at a certain temperature with sodium hydroxide, is characterized by the fact that the raw material is deacetylated, most preferably cut into 5 to 15 mm long particles, previously curtailed by the action of water , most preferably distilled, used in an amount of 1: 1 to 2: 1 with respect to the raw material, at a temperature of 273 to 303 K, most preferably at a temperature of not more than 289 K, for a period of 30 to 200 minutes, treating the thus purged raw material with sodium hydroxide will form constant in the ratio of 1: 1 to 1: 2, and after conditioning for 15 to 60 minutes, the polymer molecules are given a desired chain length by washing with water, the high-molecular polymer is obtained by washing once, and the low-molecular polymer is obtained with two washing, the first of which is carried out for approx o 1 hour water used in the amount of 30 to 50% of the part of the washed product, and then the neutralized product is dried using known methods at a temperature not higher than 353 K. The method of deacetylating the O-chitin contained in the Cephalopoda squid strings according to the invention has significant advantages, because compared to the methods known so far, it is much simpler, more economical, less energy-intensive, and above all, it gives a very high quality product, with a light color while retaining the internal structure of chitosan, maximally close to the structure of the natural polymer, characteristic for this raw material. The method involves the use of a common reagent used for this purpose, sodium hydroxide, but its consumption is at least twice as small as 1 to 2 parts with respect to the raw material - compared to the approximately 10 parts of the approximately 50% solution used in the known method. The method according to the invention uses a natural parallel, i.e. a regular and more relaxed structure of O-chitin. In nature, the form of O-chitin occurs in the form of hydrated hydrates, where two water molecules per one fragment of the chitin structure. This form, unlike other forms, is more easily penetrated by water, showing some swelling. In such a structure, the hydrogen bonds that bind the two planes of the chitin supernatural structure exist but are slightly shifted outwards. In this way, it is possible to penetrate sodium hydroxide inside the structure using the water bound in the crystal. Thanks to this, the deacetylation mechanism according to the invention requires small amounts of reagents and the reaction is easier compared to known deacetylation methods and does not require prior purification of the raw material from ballast substances or isolation of chitin prior to its deacetylation.
