Do napecznialej masy otrebowej dodaje sie rozdrobniony pszenny slód w ilosci od 10% do 20% i podnosi sie powoli temperature zacieru do 50°C. Otrzymany preparat nadaje sie do bezposred¬ niej konsumpcji i niewamaga poddawania go dodatkowym zabiegom jak gotowanie, parzenie, mieszanie z innymi skladnikami. Do napecznialej masy otrebowej dodano 15 kg slodu pszennego, dlugiego rozdrobnionego i ogrzewano zacier stopniowo w ciagu 30 minut do temperatury 50°C po2 129 125 czym scukrzono zacier przez 3 godziny. Po zakonczeniu procesu scukrzania zacier ogrzano do temperatury 95°C i utrzymywano go w tej temperaturze przez jedna godzine a nastepnie poddano go filtracji celem oddzielenia brzeczki. Otrzymany preparat wysuszono w temperaturze 35°C do momentu obnizenia zawartosci wody do 10% i przesiano na sitach. Otrzymano preparat o wysokiej zawartosci blonnika, wysoko-witaminowy o atrakcyjnym smaku i obnizonej kalorycznosci. Preparat ten zachowal pelna wartosc przez okres trzech miesiecy.Zastrzezenia patentowe 1. PracowniaPoligraficzni UP PRL. Recent scientific research has shown that ballast substances, also called dietary fiber, play an extremely important role in human nutrition. Since fiber is necessary for the proper passage of food in the intestines, the use of these substances in the nutrition of elderly people and in the nutrition of patients suffering, in particular, from diseases of the gastrointestinal tract, is of particular importance. Apart from fruits and vegetables - cereal grains are sources of these substances. and processed cereals. Among the processed cereals, bran is distinguished by a particularly high content of dietary fiber. So far, bran has been used primarily as an ingredient in animal feed. The bran intended for immediate consumption must be free of impurities and starch. It is also desirable to fix the preparation, which will keep its value unchanged for a period of at least several months. These requirements are achieved in the method according to the invention, in which the fresh bran pretreated from sand, impurities and cereal-flour pests as well as ferromagnetic impurities is soaked at a temperature of about 30 ° C for 24 hours, the most preferred being when one part of the volume of the bran is soaked in six parts of water. Ground wheat malt is added to the foaming mass in an amount of 10% to 20% and the temperature of the mash is slowly raised to 50 ° C. It is important that the temperature does not rise faster than one degree Celsius in two minutes. The saccharified bran is then heat-treated at a temperature of 85 ° C to 95 ° C for 60 minutes, after which the mass obtained is filtered and dried in temperature of 35 ° C. After drying the substance to a water content below 10%, a preparation with a high content of fiber and vitamins is obtained, with an attractive taste and reduced caloric value. The obtained preparation is suitable for direct consumption and it does not require additional procedures such as cooking, brewing, mixing with other ingredients. In order to maintain the original quality of the formulation over a longer period, it is advantageous to pack it in packages with very low water vapor permeability. 600 L of water was added to 100 kg of wheat bran and soaked for 24 hours, keeping the temperature of the mixture at about 30 ° C. 15 kg of long ground wheat malt was added to the foaming mass and the mash was gradually heated over 30 minutes to 50 ° C, after which the mash was saccharified for 3 hours. After completing the saccharification process, the mash was heated to 95 ° C and kept at this temperature for one hour, and then filtered to separate the wort. The obtained preparation was dried at 35 ° C until the water content was reduced to 10% and sieved. A high-fiber, high-vitamin preparation with an attractive taste and low caloric value was obtained. This preparation retained its full value for a period of three months. Patent claims 1.
