Abstract
A process of making cassava cookies enriched with vegetables comprising the steps of collecting the ingredients: cassava, sesame seeds, red mongo seeds, moringa leaves, seaweeds (Eucheuma cottonii), water, unsalted butter, margarine, and brown sugar; powdering the dry ingredients, mixing the ingredients, and cooking in a pre-heated oven for 45 minutes at 185øC; and finally cooling and packing the cookies for sale and/or consumption.
