Abstract

A process for making mixed vegetable pickles comprising the steps of: a)sorting of the vegetables;b)cleaning of the vegetables; c)washing of the vegetables; d)slicing the eggplant, radish and carrots into half-moon shape; e )slicing bitter gourd, ell pepper, onion bulb, garlic into fine strips; f)soaking sliced bitter gourd, radish and eggplant in 10 pcnt brine solution for 3 hours; g)slicing string beans into two inches' length; h)blanching the sliced string beans in 2-5 minutes in 10 pcnt brine solution,i)washing of the vegetables soaked and blanched in 10 pcnt brine solution to removed impurities,set aside;j)preparing the pickling solution with a mixture of 250 ml vinegar, 2750 grams of sugar and 5 grams of salt,set aside; k)preparing pickling spices with a mixture of 2.75 ml.,70 grams of garlic,70 grams ginger and 100 grams onions; l)cooking the pickling spices with the vegetables in the pickling solution for 2 minutes;m)packing the mixed vegetables pickles in sterilized glass jars;and n) storing the mixed vegetable pickles in a cool dry place.
