The present utility model re1ates to the process producing powder from pili pulp that contains less carbohydrate and more in protein and other nutrients and used as a binding agent, structural agent, and a filling agent in selected food products involves the following steps: a) Grading and Selecting of the pili fruit; b) Washing the pili fruits; c) Peeling of the pili fruit; d) Blanching of peeled pili fruit; e) Depulping of the pili fruit; f) Extracting of the blanched pili pulp; g) Drying of the extracted pili pulp; h) Pulverizing the dried pulp; h) Sifting of the ground pili pulp; and j) Storing the pili-pulp powder moisture.
