Abstract

Shortening is prepared by injecting a gas into a liquid fat and cooling the mixture. The injection occurs at approx. 1.75-6.8 atm. The al reacted fat is quickly cooled, whilst agitated, to a temperature of about 4.4-24 degrees C. The mixture is then passed through a high shear force turbine mixer, while the pressure throughout the operation is kept below the highest gas injection pressure.
