Abstract

Flavouring compositions are produced by adding an alpha-tetronic acid derivative of formula (I) to a combination of flavouring substances with a non-specific nutty odour and taste. (where m + n is even and is not >4). They are strong flavouring agents, and provide the compositions with the characteristic aroma of roasted nuts and hazelnuts when added in very small concentrations.
