Abstract
Fish protein of high food value, is by (a) chopping and homogenising the fish (b) dissolving the homogenised fish in thin lye at a pH of 9-11 and 40-75 degrees C over a period of 1 to 2 1/2 hours. (c) separating the solids and free oil (d) precipitating the protein by adjusting the pH to 4.5-5.5 and separating the precipitate (e) extracting the precipitate with a fast-solvent and (f) removing the solvent from the extracted protein.
