Abstract

Provided is a method of producing edible oil having a reduced bound-3- Monochloropropane-1,2-diol (bound-3-MCPD) content, and more particularly, a method of producing edible oil in which diacyglycerol (DG) in the edible oil is removed to have a content of 0.5% or less through thin film evaporation to reduce a bound 3-MCPD content to 0.5 ppm or less.
