Abstract

Se proporciona un sistema de coccion y de manera mas especifica, un sistema de coccion del tipo de parrilla que tiene una superficie de calentamiento en donde la temperatura de la superficie de calentamiento de la parrilla es sustancialmente uniforme a lo largo de toda la superficie. Esta temperatura superficial uniforme se mantiene aun cuando los productos alimenticios sean colocados sobre unicamente una porcion de la superficie de coccion. El sistema de coccion reduce al minimo la coccion excesiva de una superficie externa del producto alimenticio, para reducir de manera sustancial o eliminar la generacion de mutagenos o carcinogenos y a la vez reduce al minimo de igual modo la subcoccion del producto alimenticio, eliminando de este modo bacterias peligrosas dentro de producto alimenticio. El sistema de coccion incluye una camara de medio de coccion sellada que tiene una superficie de coccion superior sustancialmente plana, una superficie inferior y paredes laterales para alojar un medio de calentamiento en forma de agua. Se proporciona un mecanismo para calentar el agua dentro de la camara de medio de coccion ya sea dentro de la camara en si o adyacente a la camara con medios de control provistos para controlar la temperatura de la superficie de coccion superior, en donde la temperatura de la superficie de coccion superior es uniforme sobre toda la superficie expuesta de la superficie de coccion superior.
