La presente invención se refiere a una composición de carbohidrato caracterizada porque tiene una equivalencia de dextrosa de 20 a 25 y además caracterizada porque tiene un contenido de fibra de 10 a 90% en peso de la composición, en base seca. La invención se refiere además a un proceso para la elaboración de una composición de carbohidrato. Además, la invención se refiere a un alimento, comida, alimento para mascota, producto farmacéutico, cosmético e industrial que comprende la composición de carbohidrato de la presente invención y otros ingredientes y al uso de la composición de carbohidrato de la presente invención.
