Abstract
La presente invención se refiere a la síntesis de moléculas bioconjugadas, de entre dos o más grupos funcionales siguientes: azúcares, prebióticos, oligosacáridos, polisacáridos, triglicéridos, ácidos grasos, ésteres de ácidos grasos, antiinflamatorios; con su proceso de obtención por síntesis biocatalizada utilizando hidrolasas tales como esterasa, proteasa lipasa o cutinasa y a su purificación por diversos métodos que comprenden lavado y secado. Así como a sus usos en alimentos, fármacos y cosméticos: como nutracéutico prebiótico, antiinflamatorio, antitumoral, vector intestinal, ingrediente tecnofuncional para uso alimenticio (emulsificante, sustituto de grasa) y cosmético emoliente; los cuales son posibles al tratarse de moléculas no tóxicas de acuerdo a las pruebas Ames.
