Abstract

La presente invención se refiere a un proceso para la producción de ácidos grasos, monoacilglicerol (MAG) sn-regio, diacilgliceroles (DAG) sn-regio y glicerol, que comprende: preparar una mezcla homogénea de grasa, disolvente polar orgánico y agua, en donde la mezcla homogénea está preparada mediante la mezcla de grasa, un solvente orgánico polar y agua en una proporción de1:4: 0.15 1:7:0.5, bajo condiciones para formar un sistema de fase simple; someter la mezcla homogénea a una primera hidrólisis enzimática con una lipasa inmovilizada para obtener un hidrolizado parcial que comprende ácidos grasos, MAG, DAG y glicerol; someter el hidrolizado parcial a una resina de intercambio iónico para obtener un primer producto que comprende MAG y DAG; y someter el primero producto a una segunda hidrólisis enzimática con la lipasa inmovilizada para obtener un segundo producto que comprende ácidos grasos, glicerol, y menos 5% de MAG; en donde el solvente orgánico polar se selecciona del grupo que consiste de t-butanol, isoamil alcohol, diacetona alcohol, etanol, propanol y t-pentanol.
